Mrs. Floyd Larkin of Eatonville, Wash., showed us how to make it. She says it's "the Mayor's favorite" (Floyd Larkin is the mayor). He and his wife are also co-publishers of the local newspaper, the "Eatonville Dispatch" — except, of course, when' Mrs. Larkin isn't baking a cake for His Honor. Easter Treat: Chocolate Walnut Pie Something heavenly for Easter must be the dessert. So why not Chocolate Walnut Angel Pie? It's as light as an angel's wings— and will make everyone sigh in CHOCOLATE WALNUT ANGEL PIE Ingredients: 2 egg whites, H teaspoon salt, % teaspoon cream of tartar,' % cup sifted sugar, % cup' finely chopped walnuts, *£ teaspoon vanilla, 2 teaspoons gelatin, % cup cold water, 2 squares (2 ounces) unsweetened chocolate % cup milk, 2/3 cup sugar. 1 i teaspoon salt, \k teaspoon vanilla, 1 cup cream (whipped). Method: Put egg whites, salt, and cream, of tartar in mixing bowl. Beat until foamy throughout. Add sugar, 2 tablespoons at a time, beating after each addition until sugar is blended. Then continue beating until mixture will stand in very stiff peaks. Fold in walnuts and Vs teaspoon vanilla Spoon into lightly greased 8-inch pie pan and make a nest-like shell, t-ilding sides up 3 i inch above edge of pan. Bake in slow (30QF) oven 50 to 55 minutes. Cool. Soften gelatin in cold water. Heat chocolate and milk in double boiler. When chocolate is melted, beat with eggbeater until blended. Add softened gelatin, sugar and salt; stir until "gelatin is dissolved. Chill until mixture begins to thicken. Fold in vanilla and whipped cream. Pour into cooled meringue shell. Chill until firm (about 2 hours ». Top with extra chopped walnuts. I cup drained, crushed pineapple: fa cup heavy cream, whipped. Mix cornstarch with pineapple juice. Cook until very thick, stirring constantly. Stir in fa cup of the confectioners' sugar. Cream, margarine until fluffy. Add the remaining confectioners' sugar alternately with the cooked mixture. Beat in lemon rind and salt. Split the sponge cakes to make. 4 layers. Place a layer in an 8fa~ inch spring-form pan. Line the sides of the pan with ladyfingers, standing them between the cake and the sides of the pan. Spread the cake layer with V 4 of the creamed pineapple mixture. Sprinkle with 1-3 cup of the drained, crushed pineapple. Repeat the procedure, using the remaining cake and filling. Chill in refrigerator 10 to 12 hours or overnight. Garnish with whipped cream as desired. They are really something special: flaky individual pastries, with an out-of-this-world filling and a topping of pineapple rings. Flute edges and prick sides and bottoms to prevent puffing. Chill pastry on pans before baking. Place on baking sheet and bake in a very hot (475F) oven, 8 to 10 minutes. (If desired, fill unbaked tarts with rice or fit a second tart pan over the tart shells for the first half of the baking period, then remove to allow the tart shells to brown.) GLAZED PINE\PFLE TARTS Ingredients: One No. 2'/ 2 can pineapple slices (8 slices ). one 8- ounce package cream cheese, eggs, 1 cup sugar, fa. cup lemon juice, 2 teaspoons grated lemon rind, eight 4-inch baked tart shells, 8 maraschino cherries. Method: Place pineapple slices on absorbent paper to drain. Set aside pineapple syrup for glaze. Let cream cheese soften at room temperature in a mixing bowl. Beat eggs intop of double boiler until thick and fluffy. Gradually beat in sugar, lemon juice and lemon rind. Cook over hot water, stirring constantly, until custard is Here's a fruit bread that is both festive and easy to make. EASTER FRUIT BREAD thick and smooth. Cool. Beat softened cream cheese until smooth and creamy. Gradually blend in cooled custard. Divide mixture among tart shells. Add pudding mix and beat with egg beater 1 minute, or until well mixed. Let stand until set — takes about 5 minutes. Just before serving, stir topping until creamy. Serve on angelfood slices. Horn Slice Good Easter Dish for Small Family For the Small family's Easter dinner, a ham slice may be the perfect choice. Broil the handsome slice with peach halves, like this: Choose a one-inch thick ham slice Place on broiler rack with the surface of the meat 3 inches from heat and broil for 10 minutes to 15 min. or until browned. Turn. Place drained peach halves around meat; brush peaches with melted butter or margarine and sprinkle -with brown sugar. Continue broiling for 10 to 15 minutes.
