Friday Evening, January 20,1922. 1 A I PAGE THIRTEEN. DRIED BEANS. 1C you would use dried beans as a substitute remember two flc- All beans require long, slow booking and the addition of fat. The long cooking softens the skins and Jnakes thorn digestible and the fat adds tlic clement lacking in beans.

There are several varieties of dricrl beans to choote colored. The colored beans arc richer in flavor than i beans. BAKED BEAXS. Three cups navy beans, Bait pork. 1 dessertspoon salt, dessertspoons molasses, 2 dessertspoons 1 teaspoon mustard, 1 cup i i water.

Pour over the seasonings mixed with the boiling water. Add enough more boiling water to cover beans. Cover bean pot and bake In a slow oven for six hours. Add more water as necessary during the first four hours of baking. Then pull the pork to the top of the beans to brown.

3t the liquor cook away about half. STEW. One cup Cried lima beans. 1 cup sliced raw- potatoes, 1 cup diced carrots. 3 tablespoons butter, 2 cups tomato juice, 2 tablespoons catsup, 1 teaspoon salt, teaspoon pepper.

Wash beans and soak over night in cold water. Drain and put in with cold water to more than cover. Simmer for an hour after the beans begin to boll. Add potatoes and car- rota and salt and pepper. Cook an hour longer, adding water to prevent burning.

Let the water cook away as the vegetables become tender. Add butter, tomato juice and catsup and simmer halt an hour. Serve with soda crackers. BEAN PATTIES. One-half cup black beans, 1 teaspoon salt, 2 tablespoons bacon fat, cup cracker crumbs, 3 tablespoons chill sauce, 1 egg.

Wash beans and soak over night. Boil until tender In salted water to cover. Drain and rub through a sieve. Adfl chill sauce, bacon fat, and iruinbs to bean pulp. Mix well and stir In egg slightly beaten.

It not moist enough to shape well add a little milk. Shape in a roll and let become firm. J. F. Lawson. The Sew-a-Bit club met Thursday afternoon with lira. Homer Wright, Mr.

and lira. W. B. Robinson left Thursday for Chicago. William Bishop was a Decatur visitor Thursday.

MANY ATTEND WELFARE STATION Forty Present During Afternoonj 54 a Week Ago, Cold weather does not interfere with the attendance to any great extent at the Infant Welfare Station. When the doors opened Thursday afternoon twelve women were present with their babies. About forty were present during the afternoon. Fifty- four attended last Thursday. There is never as much sickness among the babies during the winter months as in the summer, and the attendance is always smaller at this time of the year.

One child that was present Thursday "has had Infantile paralysis, although the mother did not know it at the time, thinking that the child was cross for several days because It was teething. As a result of this disease one leg is partially paralyzed. But with massaging the muscles every day, for perhaps a period of several years, the child will have the use of tne leg restored. PERSONALS William Boltz and family of Burlington, who came to Decatur to attend the funeral of Mr. Bolz' mother, will leave for their home Friday morning.
