ELPING ANDS Upcoming events for non-profit organizations Plan the ultimate tailgate party SUN-DRIED TOMATO DIP 1 (8 oz.) pkg. low-fat cream cheese 1 cup plain low-fat yogurt cup sun-dried tomatoes in oil, drained cup coarsely chopped green onions 1 T. fresh lemon juice tsp.

lemon zest tsp. salt cup chopped fresh parsley 1 T. minced fresh basil lend cream cheese with next 6 ingredients in a food processor until smooth. Fold in parsley and basil; cover and chill. Serve with chips, breadsticks, and crackers.

PIMIENTO CHEESE DIP cup shredded cheddar cheese 4 oz. of cream cheese, softened cup sour cream cup mayonnaise 1 small jar chopped pimientos, drained 1 tsp. Tabasco sauce Salt and pepper to taste 4 strips of bacon, cooked and crumbled cup chopped green onions Blend cheddar cheese with next 5 ingredients in a food processor until almost smooth. Season with salt and pepper. Cook bacon until crisp; drain and crumble.

Blend half of the bacon bits into the cheese mixture; cover, and chill. Before serving, garnish with reserved bacon and chopped green onions. Serve with crisp veggies, crackers or baguettes. RASPBERRY CHIPOTLE DIP 1 bottle roasted raspberry chipotle sauce (available in specialty stores such as those on the Granbury square.) 2 (12 oz.) cartons of whipped cream cheese 1 cup pecans or almonds, toasted Toast nuts and cool. Put cream cheese on a glass platter.

Pour chipotle sauce over cream cheese. Garnish with toasted nuts. Serve with baskets of assorted crackers, chips and deli breads. he best tailgate parties blend three friends, scrumptious snacks and exciting football games. Our tailgate crowd is an eclectic bunch and our party foods run the gamut from ordinary to gourmet.

Some of us are traditional, a few of us are adventuresome, but all of us are fun- loving. Our tailgate adventures are as much fun as the football game and sometimes even more fun. Our interest in the game fluctuates, but our enthusiasm for tailgate parties intensifies as the season gets underway. Finger foods, crunchy appetizers, creamy dips and yummy desserts are favorite choices. Most of our tailgate events are staged over several weeks, but a few are spur- of-the-moment, stadium parties.

Pat Stevens Cooking Field Expert Bon Appetit CASHEW CHICKEN AVOCADO WRAPS Recipe compliments of Southern Living Cooking School. 1 deli-roasted chicken cup reduced-fat mayonnaise cup chopped fresh basil 2 T. lime juice 1 tsp. chile-garlic paste 4 (10-inch) flour tortillas 2 avocados, peeled and sliced cup chopped cashews 4 red tip lettuce leaves Remove bones from chicken and coarsely chop meat. Stir together mayonnaise and next 3 ingredients until blended; stir in chicken.

Place chicken evenly down center of each tortilla; top with avocado slices, cashews and lettuce. Roll up and wrap individually in plastic wrap. Chill up to 2 hours. HERB ROASTED POTATO SALAD Recipe compliments of Southern Living Cooking School. Start with a convenience food and add a spicy touch for a crowd-pleasing potato salad.

1 (32 oz.) pkg. frozen Ore-Ida Southern Style Hash Browns cup olive oil 3 celery ribs, chopped cup chopped sweet onion 1 cup mayonnaise 2 T. Dijon mustard 1 garlic clove, pressed 1 T. chopped fresh dill or 1 tsp. dried dill weed 1 tsp.

salt tsp. freshly ground black pepper Garnish: fresh dill sprigs Toss together hash browns and oil. Spread evenly on lightly greased baking sheet. Bake at 500 for 25 minutes or until done. Stir frequently.

Cool on a wire rack. Combine hash browns, chopped celery and onion in a large bowl. Stir in mayonnaise and remaining ingredients. Put in serving bowl, cover and chill. Garnish with fresh dill sprigs.

TOFFEE ALMOND SANDIES These crisp cookies are enhanced with toffee bits and almonds. 1 cup butter, softened 1 cup sugar 1 cup powdered sugar 1 cup vegetable oil 2 eggs 1 tsp. almond extract 4 cups flour 1 tsp. baking soda 1 tsp. cream of tartar 1 tsp.

salt 2 cups chopped almonds 1 cup English toffee bits (or almond brickle chips) Additional sugar for rolling In a mixing bowl, cream butter and sugars. Add oil, eggs and extract; mix well. Combine flour, baking soda, cream of tartar and salt; gradually add to the creamed mixture. Stir in almonds and toffee bits. Shape into 1-inch balls; roll in sugar.

Place on ungreased baking sheets; flatten with fork. Bake at 350 for 1214 minutes or until lightly browned. Remove to wire racks to cool. Makes about 12 dozen small cookies. Opinion Poll comments should not exceed 350 characters.
