Cooks' Corner Passing Scene The News and Observer, Thursday, January 7, 1965 15 Carolina Bridge Those Card Sessions With New Snacks This Year By ELIZABETH SPARKS Spiced Brazilian Chocolate Bridge anyone? Of course, there is always someone for bridge. It is entirely possible to play bridge without eating or drinking, but few tackle the game in that manner. What to serve? If it is to be of bridge, most hostesses serve a dessert. This season why not forget about desserts and serve sandwiches and coffee? Give a thought to an open-face grilled cheese, bacon and tomato sandwich. Serve with unpeeled wedges of juicy apple.

To prevent discoloration of apple, dip in one of the anti solutions. Another time tuna toasties may appeal to you. Do ti them this way. They can be made in advance, then sliced and broiled just before serving. Tuna Toasties 2 cans ounces each) tuna, flaked 1 cup mayonnaise 1 teaspoon grated onion 1 jar (2 ounces) pimento, minced cup chopped green pepper 1 teaspoon curry powder teaspoon salt" teaspoon paprika 1 loaf pounds) unsliced bread cup butter, softened Drain tuna and combine with mayonnaise, onion, pimento, salt and paprika.

Blend to green pepper, curry, powder, make a spreadable mixture. Cut crusts from bread and cut into thin horizontal slices. Spread bread with butter and then with tuna mixture. Roll up like a jelly roll. with picks if needed.

Cover with foil and chill. At serving time, cut into thin slices with a good bread knife. Run under the broiler to toast lightly. this with spiced tea. Fragrant Hot Lemon Tea 3 tea bags or 3 tablespoons leaves 1 3-inch stick cinnamon, crushed 10 to 12 whole cloves 6 cups boiling water 1-3 cup sugar 1 teaspoon grated lemon peel cup lemon juice Lemon quarters or slices Place tea in heated teapot; add spices loosely tied in cheese cloth.

Pour boiling water over tea; cover; steep for 5 minutes. Remove spices and tea bags or strain. Add sugar, grated lemon peel and lemon juice. Serve hot with lemon quarters or slices. Another time fill the cups with this spiced chocolate.

Fri. 'Til 9 Wed. 'Til' 1 cup whipping cream tablespoons instant decaffeinated coffee cup water 2 squares unsweetened chocolate cup sugar 1 teaspoon cinnamon Dash of allspice Dash of sait 3 cups milk teaspoons vanilla Whip the cream. Set aside. Dissolve instant decaffeinated coffee in water.

Cook and stir over low heat until chocolate is melted and mixture is smooth. Then bring to a boil. Reduce heat and simmer two minutes, stirring constantly. Add sugar, spices and salt. Gradually stir in milk.

Heat thoroughly, sitrring occasionally. (If necessary, beat with rotary egg beater to blend completely.) Remove from heat; add vanilla. Pour into cups. Top with whipped cream. Makes 4 cups, enough for 6 servings, about 5 ounces each.

Something else is "going around." This time it is something called mayonnaise biscuits. Naturally, I whipped up a batch when I got the recipe. They couldn't have been easier. I almost mixed them with one hand while the other hand made a cup of tea. They are light, tender and just melt in your mouth.

There is no taste mayonnaise in them. I served them with freshly made damson plum preserves from the big kettle and country butter. It was cool enough for a fire in the fireplace in the kitchen. All in all, it made a culinary occasion to remember. The biscuits look more like muffins.

This is the recipe. Mayonnaise Biscuits 2 cups self-rising flour 2 tablespoons mayonnaise 1 cup sweet milk Stir all ingredients together. Turn into greased and floured muffin tins. (With the new Teflon-coated pans, greasing is unnecessary.) Bake until done in a 450-degree oven. Today's Events Episcopal Church.

Here are three recipes for economical cuts of meat. Braised Stuffed Heart Wash one beef heart and remove hard parts.

Fill cavity with bread stuffing of your choice. Sew or skewer the heart to hold stuffing inside. Dredge the stuffed heart in cup flour seasoned with 1 tsp. salt and 14 tsp. pepper.

Brown on all sides in 2 tbsp. lard or drippings. Lastly, add 14 cup water, cover tightly and bake at 300 for 3 to hours or until tender. Add more water if necessary. Serves 8.
