The term terrapin is loosely applied to several American fresh water turtles considered as highly valuable food. There are about 20 popular species of terrapin in the United States. The best known is the Diamond Back Terrapin, about 7 to 8 inches long, gray in color with Black markings, found in salt marshes from New York to Texas. It feeds on crabs, snails and other water animals, also green plants. The flesh of the Diamond Back is in high favor and is a delicacy.
