You can with recipes from The Miami Herald ($2075) while cooked as we'd ordered it was carved elsewhere and presented with globs of fat still clinging A bouquetiere of fresh vegetables accompanying the entrees was quite attractive barely cooked carrots simply garnished with snips of fresh dill a boiled potato flecked with fresh parsley crisp pea pods lightly tossed in a soy dressing and cauliflower flowerets in hollandaise However the vegetables were not even remotely warm We would have sent the plate back if a waiter had been available but by the time someone passed by our table we had finished our entree and were no longer interested in the vegetables When we complained we were told that a new vegetable cook was on duty that the vegetables are parboiled in the nouvelle style and are supposed to be lightly sauteed to order as each entree is readied for serving Our vegetables apparently had never been treated to the final heating A dessert cart was rolled up The chocolate mousse ($3) was light and burnished with orange but unfortunately was garnished with something that tasted suspiciously like a nondairy whipped topping Our captain could not tell us what kind of filling lay beneath the fruit in a tart another lapse we found irritating For the record the filling was a gelatin rather than custard the pears and peaches were canned We were never offered refills on coffee ($150) we poured our own wine we had to ask twice for the check If the service had been bet By LINDA CICERO Herald food Writer It's obvious that a lot of care went into the making of Maison The rich rose-colored damask the Limoges dinner service and sprays of fresh flowers everywhere create a quiet elegance Warm wood paneling amber lighting and windowless walls create a cocoon a cozy haven completely removed from the hustle-bustle and neon of the shopping mall just below Unfortunately that attention to detail evident in the day-to-day operation of Maison Our initial impression of Maison that it re-created a gracious old hotel's dining room in more than just appearance began to fade after a most affable maitre 'd left us in the hands of a most pompous captain who made us feel as if he were doing us a favor by taking our order Now we were one of only three couples in the dining room the night we visited so the problems we encountered cannot be chalked up to an overworked staff From the very beginning we were puzzled by our attitude Our attempts to exchange pleasantries to elicit information about the menu were met by monosyllables We selected a wine from a fairly pedestrian list (we paid $18 for a bottle of Mouton-Cadet available in most grocery stores for less than $6) The captain brought it out in a silver basket then sloppily splashed some on the floor when he pulled the cork without bothering to hold the bottle upright This lapse could have been overlooked if he had sim- IRV TONY INVITE YOU TO JOIN THEM FOR THEIR NEW SUMMER LOEWS EARLY BIRD PRICE 167 ST KiNDAU Ta 6 00 PM MON Thru SaI Sunday 6 not 09 Tii 30 pm 50 Al bt SO BAY HARBOR ION Min St JUST OF COLLINS SM 241 HOMEWORK JOHN COllM TWILIGHT MENU MP!
