Smoky Yemen Motels Offer Human And Donkey Medleys By ABDULLATIF EL MAT SANAA, Yemen (AP)-Mbtels in this Arab' look like they came straight out of a 12th century engraving. They are dotted all over this wiW country--near highways, roads and remote mountain trails hidden in the clouds most of the year. A typical motel, called "sam- sarah" in Arabic, looks something like this: It's a three-story building made of stone, brick or mud, usually with the walls plastered or daubed with clay. Most motels double as trading posts, so the forecourt is usually piled with sacks of grain, earthenware jars of oil and stacks of wood for the motel's oven. You can't miss the oven that's where all the thick black smoke is coming from.

In the back'are camels, mules, donkeys, horses, oxen, sheep and goats, and several customers who like to sleep next to their animals. There is no need for piped-in music in every room. The noise from the animals and their masters penetrates everywhere. Food is served on the ground floor. A typical menu includes bal- sdy mutton in brotti, helba ground fenugreek, potatoes, wild leek, black pepper, beans, cayenne pepper and garlic in meat soup, baneeth meat fried in animarfat and that delectable sweetmeat, bint el sahn flour, eggs, baking powder, ghee and plenty of honey on top.

The second floor could be called the recreation room. Patrons sit around all evening and chew qat, mild narcotic vored in Yemen. Customers sleep on the top floor. "Samsarahs" have been common in Yemen for -centuries. Until recently they were the only place a weary traveler could rest his tired bones.

It even serves French and other European dishes, but this has provided problems. An Kast German customer and an Arab waiter recently spent 10-minutes trying to explain to each other the French and Italian words on the menu.
