Yield: Serves six Cranberries Offer Many Good Recipes Fruit May Be Used To Make Sauces Or Delicious Desserts cranberries again The first recipe makes a delicious spread the second a delicious sauce and the third a relish which requires no cooking CRANBERRY ORANGE MARMALADE 3 oranges 4 cups fresh cranberries 4 cups water 3 cups sugar 3 cups corn syrup (dark or white) 1 teaspoon whole cloves 4 2-inch stick cinnamon Wash and quarter whole oranges With a sharp knife remove pulp cut Into small pieces and reserve Cut peel crosswise into very thin strips Cover with cold water bring to boiling point and boil for 5 minutes Drain and repeat cooking process 3 times Combine peel with cranberries orange pulp and water and cook for minutes Add sugar corn syrup and spices and continue cooking Until mixture thickens 20-25 minutes Cool slightly pour into hot sterilized jars and cover with melted paraffin Makes half-pint jars Oruse3cupi maple syrup or 1V4 cups honey CRANBERRY FRUIT SAUCE 1 cup com (dark-Or white) 1 cup sugar 1 cup water 4 cups fresh cranberries 2 peeled apples sliced thin 1 2-lnch stick cinnamon Grated rind 1 oranga Grated rind 1 lemon Combine com syrup sugar and water bring to boiling point and add remaining Ingredients Cook slowly without stirring' until cranberry skins pop open and apple slices are 10-15 minutes Remove from heat and allow sauce to remain in cooking dish until cool Makes 1 Yi quarts sauce Or use 1 cup maple syrup or 4 cup honey CRANBERRY APPLE RELISH (No Cooking) 4 cups fresh cranberries 2 apples pared and cored 2 oranges 1 lemon 1 cup sugar 1 cup corn syrup (dark or white) Put cranberries and apples through food chopper Quarter whole oranges and lemon remove seeds and put through chopper Add sugar and syrup and blend Chill in refrigerator a few hours before serving Makes 1 Yt quarts relish This sauce will keep well in th refrigerator for several weeks Or use 1 cup maple syrup or cup honey Mold Cranberry Apple Relish in
