Just as the more than 4,000 separate meat packing companies compete with each other in buying livestock and selling meat so millions of shoppers select meat daily from the available supply. And at retail, when meat cuts are in large supply, prices are lower than when they are in limited supply. The supply of one meat or another may change greatly from week to week, or season to season. results in meat prices going up or down.
