The Salina Journal Wednesday, April 3,1985 Page 16 Leftovers (Continued from Page 15) Apple and Beef Supper Saute 8 ounces cooked beef or pork strips, thinly sliced (about 2 cups) 1 Golden Delicious apple, thinly sliced '£ cup red or green pepper strips Salt and pepper Minced parsley 1 medium onion, thinly sliced 1 cup sliced mushrooms 1 tablespoon oil 1 tablespoon flour V4 cup beef broth Vt cup dry white wine* Dash of Worcestershire sauce Dash of garlic powder Saute onion and mushrooms in oil until onion is tender. Stir in flour; cook and stir 1 minute. Add broth, wine, Worcestershire sauce and garlic powder; cook and stir until slightly thickened. Stir in meat, apples and red pepper. Salt and pepper to taste. Heat thoroughly. Garnish with parsley. Serves 3 to 4. Recipe can be halved. * One-quarter cup additional beef broth can be substituted for white wine. Per serving: Approximately 317 calories, 24 grams protein, 17 grams fat, 15 grams carbohydrates, 53 milligrams cholesterol and 239 milligrams sodium. Apple and Corned Beef Hash % cup prepared gravy 1 teaspoon prepared mustard 1 teaspoon prepared horseradish 1 tablespoon oil 2 cups cooked corn beef, diced 2 cups cooked potato, diced 1 Golden Delicious apple, diced M> cup chopped green onion V4 cup chopped parsley Combine corned beef, potatp, apple, green onion and parsley. Combine gravy, mustard and horseradish; stir into corned beef mixture. Heat oil in skillet; spread corned beef mixture evenly in skillet. Cook over medium heat 10 to 15 minutes or until thoroughly heated; turn occasionally. Serves 3 to 4. Recipe can be halved. Per serving: Approximately 332 calories, 15 grams protein, 20 grams fat, 25 grams carbohydrates, 17 milligrams cholesterol and 955 milligrams sodium. The low-calorie sweetener also has been a plus for the makers of a growing number of consumer products. NutraSweet has given an added kick to products that already were doing well, such as diet soft drinks. IUhas rejuvenated 'stagnant products, such as powdered soft drinks. And it is making new products possible. "This is big news in the food industry," says Robert Seelert, group vice president for General Foods Corp. Emanuel Goldman, a consumer products analyst with the invest- rnjnt firm Montgomery Securities Inc. ip San Francisco, says, "Nut- raSweet is going to be one of the products of the 80s." Strong demand for NutraSweet products comes from aging baby bdbmers who are concerned about their weight and health, analysts say. Some parents like NutraSweet because it doesn't promote tooth decay. NutraSweet, which is patented under the generic name aspartame, was introduced in 1981 in Searle's tabletop sweetener Equal. Now, it is available in more than 60 products, including hot cocoa, gelatin, pudding and custard, chewing gum, cold milk flavorings, and tea and coffee preparations. Besides General Foods, Searle's clients include such giants as Coca- Cola Co., PepsiCo Inc., Seven-Up Co., Borden Inc., Carnation Co., H.J. Heinz Co. and Procter & Gamble Co. Searle and its customers are seeking approval from the Food and Drug Administration for use of Nut- raSweet in other product categories, says Timothy Healy, vice president for marketing of Searle's NutraSweet group. These delicacies are interesting to make and present a festive appearance. The origin of pate is vague, but France has probably done more to develop it than any nation. French pate de foie gras made from goose liver is considered the ultimate in the field., And it should be, considering such costly ingredients as the specially developed liver and truffles. The French have also developed a number of cheaper pates, especially in the provinces, such as a chicken and ham mixture from Rouen, game pate from Perigueux, woodcock from Montreuil, duck from Amiens and fish from Abbeville. Local herbs are added to these pates, with a dollop of local wine, or perhaps some cognac. In the French countryside, farm families make a cheaper, more substantial variety which is actually a glorified meatloaf. Known as terrine, the name of the earthenware dish in which it is baked, this version is usually made from pork sausage mixed with minced pork liver.
