It la pity that we do cot eat fish more often, it kserre far greater popularity than it has ever had. Modern living conditions can for speedy methods of cooking Ilsh. As a result fish cookery has suffered greatly in many kitchens, the tender flh being subjected to too quick a heat lor too long time, or else fried in grease until it is hard and indigestible. By employing the methods of oven-frying or broiling, fish may be properly cooked In less than 15 minutes. FUh filets, freed from every vestige of scale and bone when purchased, lend themselves excellently to quick cookery.

Sardines, salmon and other fish may be obtained at any time of year. They are delicious and nourishing foods. The sardine is a re-, markably rich food. lime, phosphorus and other essentials are found in sardines. The process of manufacturing makes it possible to eat the bones as well as the fish.

This fact contributes to its use as a conveyor of minerals. To determine of fish, examine the flesh to see that it Is firm: also see that there Is bright blood, and that the eyes are bright, shiny and bulgy: the gills a bright clear red and the scales shiny. Fish Croquette 2 cups -cold cooked fish 1 cup 'white sauce, 1 tablespoon chopped parsley 1 tablespoon onion Juice A tnaarxxm salt teaspoon pepper 1 tablespoon lemon juice Mix aU ingredients' together and add more lemon Juice if needed. Shape into croquettes, dip in crumbs, beaten egg and more crumbs; fry In deep" fat and drain on brown paper. Serve with tomato sauce- Creamy Ergs with Celery erj Toast IVi cups milk 3 tablespoons butter 4 tablespoons flour teaspoon salt 14 cup diced celery, 8 hard boiled eggs tr- shcw tdafct tw- I Melt buttet, add then milk, stirring Cook until thick.

Season and add celery. Quarter eggs. Place on -toast points and pour celery mixture over. Garnish with parsley and serve. Beat eggs until add milk and flour mixed and sifted with the baking powder, then add chopped clams and season lightly with salt and pepper. Drop by spoonful in hot fat and fry until Drain on brown paper.

Canned clams can be used if you cannot obtain fresh clams in the shells. Tuna and Apple Salad 2 apples 3 cuds flaked tuna fish Do not peel apples. Cut Into ouarters and remove core. Cut into thin slices and arrange on bed of lettuce leaves. Marinate fish with French dressing.

Put fish over apples. Serve with mayonnaise. Garnish with parsley. Chocolate Marshmallow Dainty 3 eggs separated 2 tablespoons cocoa 1 teaspoon vanilla 3 tablespoons powdered sugar M. cup chopped nutmeats 12 marsh mallows cut up Pinch of salt Beat egg yolks, add sugar, salt and cocoa mixed to a paste with a little cold water and vanilla.

Beat 10 minutes. Add nuts and then fold in stiffly beaten egg whites. Pour into mold and chill three or four hours. Serve with whipped cream. Graham Not Bread 23 graham crackers rolled fine (2 cups crumbs) teaspoon salt cup sugar 1V4 teaspoons baking powder 3 eggs cup milk cup shortening 1 cup chopped nutmeat Mix cracker crumbs, salt, sugar and baking powder.

Beat eggs, add milk and melted to cracker mixture. Add chopped nuts. Bake in buttered pan in moderately hot oven 30 to 35 min utes. If chamois becomes very stiff, rinse it in a little, lukewarm water to which a teaspoon of olive oil has been added. This will make it soft.

When boiling fish that is white add a little vinegar or lemon Juice to the water to keep the flesh, white and firm. Bacon, next to butter and cream.
