Preheat oven (425 degrees F.). Drain cherries and reserve 1 cup juice. Mix sugar, tapioca, cornstarch, salt and mace in saucepan. Stir in the reserved cup of juice and cook over low heat, stirring constantly, until thick and clear. Add almonds, almond extract, cherries and a few drops of red coloring to make juice a good cherry red. Let mixture stand while preparing pastry. Line 9-inch pie pan with pastry. Pour in cherry mixture and dot with butter. Arrange lattice of pastry strips on top. Bake 40-50 minutes. Directions for Web Lattice Top • Roll out half of pastry into 12- inch circle. Cut 2 pastry circles Vi inch wide; 6'/4 and 4 inches in diameter, respectively. Cut single 2-inch circle for center. Reroll and cut remaining pastry into '/4 inch straight strips. Moisten outer rim of pastry in pie pan. Arrange some of the straight strips in spoke design. Top with circles. Cover entire rim of pie with pastry strips and press down to seal ends of all strips firmly. Bake as above. Combine sugar, flour and spices. Add cream to beaten egg. Then stir in sugar mixture. Pour into unbaked pie shell. Make at moderate (325 degrees F.) until just ;firm.
