Retired as a fisheries biologist in 1991, Fritz has become a constant fixture at Carlyle Lake. He's president of the Carlyle Lake Audubon Society and is involved in outreach activities in area grade schools. James is a retired schoolteacher, master gardener and carpenter, who is working on a prairie grass seed nursery project. Michael Detmer of Breese, who received rave reviews from the Quad Cities press for his outstanding performances at the Clinton, Iowa, Showboat this summer.

One critic called him the "MVP of the he appeared as painter George Seurat i in Sondheim's "Sunday in the Park with George," Huck in "Big River," Angel in "Rent," and in "Show Boat" and the comedy "Noises Off." Kate Fuehne of Damiansville, who has earned an MBA from Loyola University of Chicago, graduating with honors. Way to go! Julie Varel of Central High School, who was one of 141 students from 17 high schools honored for leadership skills in the Greater Belleville Area National Youth Salute conference recently at SWIC. 4 4 SERVICE SHOUT-OUTS: If you are 35 or younger, and looking for a service organization to devote your time to, check out the Breese Jaycees. It is a fun social group that also does great things for the community.

They will help with the Lucky Dog Reunion Labor Day weekend, and they sponsor the annual Moonlight Bike Ride and Fourth of July Bash as well as provide scholarships to local students. The Jaycees was founded in St. Louis in 1920 with 3,000 members.

The Jaycees continue to offer leadership opportunities to young people, giving them hands-on experience through serving the community: business, individual, community and international. The Boy Scouts provide fun and adventure for boys entering first through fifth grades. Registration for the current year is now being accepted. Come to a meeting Monday, Aug. 30, from 6:30 to 8:30 p.m.

at the Knights of Columbus Hall in Breese. Registration is $35 per boy. For more information, call Mike Ajero at (618) 304-2406. 444444 KIRCHENFEST: The fun will be "in tents" this Saturday and Sunday at the 40th annual Kirchenfest on St. Paul Church grounds in Highland.

New this year is Kirchen-Olympics from 4 to 8 p.m. Sunday when you can try your hand at a variety of games. An auction Saturday is in the north tent from 9:30 a.m. to 3:30 p.m. while a flea market is in the school gym from 9 a.m.

to 4 p.m. Saturday and 11 a.m. to 3 p.m. Sunday. A pre-sale is Friday from 6 to 9 p.m.

and admission is $4. Traditional favorites include bingo from 5:30 to 11:30 p.m. Saturday and from 1:30 to 10 p.m. Sunday: An outdoor polka Mass, featuring The Good Times Band, is set for 10 a.m. Sunday in the south tent.

The famous Bavarian Skillet, a traditional German dish of pork sausage, fried red skin potatoes, green pepper, onions and sweet sauerkraut, is a fest exclusive. They also feature a fried chicken dinner, served buffet style from 11 a.m. to 5:30 p.m. on Sunday. Brats, gyros, pizza, pork steaks, funnel cakes and more are available both days.

The event is also known for its hefty slate of entertainment. The Ralph Butler Band will play from 8 p.m. to midnight Saturday in the north tent. Sh-Boom performs from 3:30 to 7:30 p.m. in the south tent and The Well Hungarians entertain from 8 p.m.

Korball continues Sunday from noon to 5 p.m., and is open both days to boys and girls age 10 to 21, and will be played in age brackets. Anyone interested in participating is asked to have their form completed and returned by Aug. 27. Maps will be available at businesses and online www.albers-il.org before the sale date. The 13th annual D.A.R.E. Bike Ride is set for Sunday, Sept.

12, in New Baden, starting at the park, and all bikes are welcome. Registration is from 9 to 11:30 a.m. Last year, they had 650 bikes and 950 participants, so it is a fun social event for a good cause. For a suggested $15 donation, you will receive a T-shirt and an all-youcat-eat meal after the ride (fried chicken, burgers, brats, hot dogs, sides and drinks), plus there's an opportunity to win prizes. The New Baden American Legion will serve an early bird breakfast from 8 to 11:30 a.m.

Together, they've played 40 years in the baseball league! 4 4 4 4 4 ARTS AND ENTERTAINMENT: Director Charlie Huelsmann has announced the cast of "Nunsense A-Men," which includes Allan Elling, Eric Trout, John Winter, Jon Logullo and Corey Knapp. Yes, the show requires that men play the nuns! One more lucky lady -er- guy will win a walk-on role with one line of dialogue, to be auctioned off at the Clinton County Showcase dinner auction Sept. 25. The show is Oct. 16-18 and 23-25, the first indoor show of the season back at the Avon Theater.

The musical is produced by Rob Otrembiak; the music director is Paul Klostermann; and Valerie Morgan is making her stage managing debut. The Clinton County Showcase Dinner Auction: A Red Carpet Event is set for Saturday, Sept. 25, from 5:30 p.m. to midnight, at St. Dominic's Parish Center in Breese.

Tickets are on sale for $20 per person, a and tables of eight are available. The evening's festivities include dinner, dance, and silent and oral auctions. Proceeds will benefit the Avon Theatre renovations. Margie, 51, who is married to Joe, has three sons Craig, Adam and Matthew, and lives in Breese, chronicles her first breast cancer diagnosis in 1990, then liver cancer in 1996, and cancer spread to bones, brain and other body parts. She's been through nine surgeries, 100 treatments, a stem cell implant, and numerous medical procedures. Above all, she is a survivor and donates $1 from each book sale to Relay For Life. Lisa Sinner Jackson, former Breese resident now living in the Tampa Bay area of Florida, has been battling cancer and trying to surmount increased health problems. Complications from diabetes neuropathy has resulted in another round of chemotherapy, as cancer is now in her bloodstream. She would like to return to Breese to see her friends, but she can't. She is too weak and has considerable physical limitations, but she is a fighter and remains strong.

Sharon Salzberg RECIPE OF THE WEEK: Years ago, I learned the simple secret of grilling or baking foil-wrapped food, but it was first experienced at a campfire. Today, putting fish, vegetables and seasonings in a foil packet turns into a mighty fine dinner doesn't take too much time, either. The fish remains moist, the vegetables tender, and the clean-up is a jif. If you don't have a grill, there's an oven variation below the recipe.

This version of tilapia with summer vegetables was found on the web site, www.kitchendaily.com. It has a Mediterranean flavor with the olives and capers, but if you want to skip that, it'd still be dandy without them. Tilapia and summer vegetables packet: 1 cup quartered cherry or grape tomatoes 1 cup diced summer squash 1 cup thinly sliced red onion 12 green beans, trimmed and cut into 1-inch pieces cup pitted and coarsely chopped black olives 2 tablespoons lemon juice 1 tablespoon chopped fresh oregano 1 tablespoon extra-virgin olive oil teaspoon capers, rinsed teaspoon salt, divided teaspoon freshly ground pepper, divided 1 pound tilapia fillets, cut into 4 equal portions Preheat grill to medium. (No grill? See oven variation, below.) Combine tomatoes, squash, onion, green beans, olives, lemon juice, oregano, oil, capers, teaspoon salt and teaspoon pepper in a large bowl. To make a packet, lay two 20-inch sheets of foil on top of each other (the double layers will help protect the contents from burning); generously coat the top piece with cooking spray.

Place one portion of tilapia in the center of the foil. Sprinkle with some of the remaining teaspoon salt and pepper, then top with about cup. of vegetable mixture. Bring the short ends of the foil together, leaving enough room in the packet for steam to gather and cook the food. Fold the foil over and pinch to seal.

Pinch seams together along the sides. Make sure all the seams are tightly sealed to keep steam from escaping. Repeat with more foil, cooking spray and the remaining fish, salt, pepper and vegetables. Grill the packets until the fish is cooked through a and the vegetables are just tender, about 5 minutes. To serve, carefully open both ends of the packets and allow the steam to escape.

Use a spatula to slide the contents onto plates. Oven Variation: Preheat oven to Place green beans in a microwavable bowl with 1 tablespoon water. Cover and microwave on High until the beans are just beginning to cook, about 30 seconds. Drain and add to the other vegetables (Step 2). Assemble packets (Steps 3-4).

Bake the packets directly on an oven rack until the tilapia is cooked through and the vegetables are just tender, about 20 minutes. 444 4 4 9 4 SMOKE SIGNALS FROM CARLYLE JUNIOR HIGH SCHOOL New faces at CJHS per romante NEWER DATA SCHEDULE Then 41.00 Locke 12.00 Eastern Illinois University student teacher Amanda McCario is a new face this year in Mr. KG Yaunches' social studies and Constitution classroom at Carlyle Junior High School. Yaunches, a 15-year teaching veteran, is excited about supervising a student teacher for the first time in his career. Ms.

McCario specialized in middle school education. For as long as she can remember she was inspired by her own teachers who went beyond the call of duty. McCario sees education as a way to touch the lives of many. Her future plans are to teach in the Central Illinois area close to EIU. CJHS veteran P.E.

teacher Becky Wessel is sharing teaching duties with student teacher Mrs. Ambuehl. Mrs. Wessel, a Greenville College graduate and longtime teacher and coach at CJHS, is excited about working with Ambuehl to motivate students to higher levels of fitness and instill a sense of hard work, dedication and accomplishment. Ambuehl will complete eight weeks at CJHS and then move on to Carlyle High School for an additional eight weeks.

A student of Greenville College as well, Ambuehl will have a K-12 P.E. certificate along with a special education and health endorsement. One of Ambuehl's goals is to be a role model for her students. She wants to encourage them and show them the importance of daily physical activity. Ambuehl's hobbies include running and working out.

She has completed five marathons including the Boston Marathon. She will compete in the Chicago Marathon in October. Her favorite high school sports were cross country and track. Mrs. Wessel and Mrs.

Ambuehl will be a great team. 40.
