souring of milk Alisa Pearson says However if in using sour milk for cooking the whey and curd arc not thoroughly mixed many of the valuable constituents are lost and the texture of the products in which the milk is used will not be so fine after it has been cooked Injury to the texture is espociallly evident in baked food if any of the whey is lost from the milk before using Has Many Uses There
