The company opciating the new os- 7 A tablishment is the Peek-Rliine in which F.

If. Peck and T. B. Rhine, of j) this city, aro tiie principal owners. Tho (.0 company expects to incorporate in the wj near future, and conduct its business as an incorporated company.

The busd- I ness of the company is the inimufactuu 1 of California crystalied crushed fruits," and high grade flavoring ex tracts. We have seen samples of the products of tho company in both these lines, ami must say that they arc voiv nice in appearance, and no doubt of the qbalily which their nmmifacturei.s claim for them. The crushed fruits are put up in pound cartoons, and sell for 10 cents The fruit is for use in pies, fruit cakes, 1 sauces and puddings. It is put up in i oiled paper, and this, with the enclosing folds of the caiton box, makes it nearly air proof, and we are informed that the fruit will keep for a long time in any climate, hot or cold, damp or dry. The fruit is a mixture of tho choice productions of Kings county oichards and vineyards, including peaches, apri cots, prunes, raisins, etc.

These are mixed well together and pressed into cakes, one of the Vi pound cartons of I crystalized fruits makfng two good pies. The cakes are square in shape, and aio made so in moulds. Sugar is used to sweeten tho fruit, and finit juices aro also used. Tho fruit can bo prepared ready for the crust in about 20 minutes, one of tho special advantages of this prepaid! fruit being the very short time to get it ready for use. and the fruit is said to retain all natural fresh fruit flavor.

The dime- tions on the cartons, for the use of the 1 fruit, are, For two large pies: To this package add one and one-lmlf pints of cold water; allow to soak until thor oughly dissolved. Then slew about 20 minutes, when it will be ready for the crust. More sugar or a little butter may be added if desired. Let it cool before putting into crust." They have a large house and expect to prepare and pack fruit on a large scale.

For the past three month Messrs. Peck and Rhine have been ex perimenting in the preparation of tho fruit, and it has taken a great deal of' time to study out the proper amount of eaoh fruit to be used as au ingredient in the mass, for, as we have previously stated, the' crystalized crushed fruit is a mixture of quite a number of difier cut fruits. The company is now pre pared to furnish the fruit by the out load, and aro already arranging to in troduee it on the Eastern and Coast markets. They expect their largest VP sales to be in the large cities where a S) a cheap, yet good pie fruit, which can be quickly prepared for use, they feel sure will meet with a large sale. Mr.

7 2 Peck understands tho introduction ofjVW the fruit to the markets, while Mr. V) Rhine has had much experience in manufacture of extracts and the propa ration of fruits, in the East. In connection witli the manufacture I of this crushed fruit, the company will jl put up fruit extracts in bottles ex tracts of nil kinds and they should be W) able to secure all the local trade in that line. They put up the extracts in any size quantity of bottle or package the 71 trade demands. They already have put up, for store trade, a considerable quun i WJ tity of the extracts in strawberry, lem- on, vanilla, banana, in two-ounce bottles.

All their extracts are bottled under the Rex brand.
