James Wilson, Once a Crook, but Who Claims to Be Honest Now, Given Another Chance. With tears in his eyes, nleadine his gray hairs and his efforts to live an honest life -for the past three years, James Wilson, an aged man. with sev eral aliases, won the mercy of Magis trate Matthew J.

Smith in the Long Island City Police Court yesterday, and secured his discharge from custody. Wilson was one of the men picked up by central office detectives at the Long Island City depot last Saturday morning. while the crowds were on their way to the Vanderbllt cup race. Ha was held as vagrant. When arraigned before the magistrate yesterday he said: I admit that the police here have me right.

There was a time when I dirt not do what was right. I ended my last term in prison three years ago, and then I de cided to live a straight life. In Manhat tan, where I am known to the police, they have not got anything on me in that time. I determined to lead an hon est life, for I found there was nnthlne In being otherwise and I know I have but a few years here. My eyesight has been failing me and at times I can scarcely see.

"I had no intentln wrong when I wan nirkd lln last Sat. urday. I am penniless hut 1,4 found something to do. Do you know, Judge, that in my time I have had as much as $40,000 at once. But it all slipped away from me.

In the iut I have secured a number of jobs, but soon uncr i vient to work some one would come around and tell of my past and then I Would be fliRchnrtrert In thl have been driven about until at times I naie almost been driven to throw myself under the cars nnd end It all. "But, then, every time I made a new resolution and started out again. If you discharge me I am sure von will gret it." The COUrtrnnm urmrAnA at tt, n. iud UUIO the old man made his plea, and everyone was moved by it. Magistrate Smith asked Vtilson a few Questions whloh ho an swered satisfactorily.

Then the magis- utfic sum: "I am Koine tn dischnnra that you should be alt-en a rhano. i will tell you this, that if at any time you' find that you cannot get enough to support you honestly, let me know, and1 I will sen what can ho dnn all things, be sure and stick to your reso lution to De nonest." Wilson promised Magistrate Smith that he would follow his advice. According to the record which the police had, Wilson who has aliases of Fitzgerald Watson and Anderson, has done goods operator, having been sentenced by Judge Holt in the United States Court, and has been in jail in Trenton, N. Wilmington, the Eastern Penitentiary of Pennsylvania and at Montreal Canada. RETURNS IN CHURCH.

The neighborhood feeling is very strong In Flatbush, so everybody in the vicinity of Ihe church has been Invited. Last election the plan was a big success, many people preferring to stay near their homes to learn the result and avoid the crowds downtown. LAST NIGHT OF CAMPAIGNING.

lime ana customs change, and we change with them, but through all the heart of the American clings with un abated fondneBS to some of the old-time culinary favorites. And the doughnut, like the pie, still holds its own In our affections. But there, are doughnuts and doughnuts, and if you want to touch a tender spot in tno neart of a gray-haired American boy, treat him to a plate of doughnuts or crullers made by one of the famous unwritten recipes handed down through several generations of dear, good mother COOKS. One may safely indulge in such "light refreshment" as a cup of delicious coffee and crullers when made by tne smiled hand who never varies from the rule laid down by her grand-dame whose "fried cakes" were the Btar attraction of every church supper, sociable, Christmas fair or gathering to which she made a donation. Country School Doughnuts.

These are the favorite doughnuts of a certain "deestrlo school" In good old York state. Take one cup of sugar, one cup of sour milk, one teaspoonful soda, three eggs and grated nutmeg to taste. Beat all together and add flour enough to make a batter stiff enough to hold the mixing spoon In an upright position. Drop by spoonfuls Into deep, hot fat-vegetable oil Is best, as it will not soak in and fry a light brown and until well done through. Roll, while hot, in powdered sugar and cinnamon.

German Doughnuts. Make a yeast sponge with half a cup of liquid yeast, one pint of sweet milk, two eggs, one teaspoonful salt and one teaspoonful butter. Let rise very light, then add enough pastry flour to make quite a stiff dough. Let rise and. when light, form into little balls about the size of an egg.

Let them lie on the molding board to get light, covering with a cloth, while the fat is heating for frying them. When the fat is ready, take up a dough ball and pull It very thin, especially In the middle. Drop Into the hot fat and fry ratner slowly until a nice light brown color, turning frequently so they will cook evenly. When done, sprinkle with sugar. These are generally eaten warm.

Cheap Doughnuts. Take one egg. one cup of sugar, one-half cup sour milk, one teaspoonful soda, three tablespoonfuls melted lard, a little nutmeg and flour, enough to make a dough stiff enough to roll out. Roll about half an Inch thick, then cut out with a ring cutter. Let them lie on the board about half an hour, or while the fat is heating.

Drop In a little piece of dough and if it comes to the surface at once the fat Is hot enough. But do not have It too hot or the doughnuts will not cook through before they are brown enough. Roll them in sugar' while they are hot. Cream Doughnuts. Take one pint of sour cream, two eggs, one cup of sugar, one teaspoonful soda, half teaspoonful salt and half a teaspoonful cinnamon.

Add enough flour to make a stiff dough like biscuit dough. Roll out. cut In diamond Bhapes and fry in deep hot fat. "enough to float them. Stuffed Doughnuts.

Use any doughnut feclpe, pinch off pieces of the dough the sine pf an egg, pnt out, making a hollow In the middle; put In a spoonful of any taft stiff jelly or marmalade, roll the dough into a ball, covering the filling completely, and drop the doughnut into hot fat and fry' a nice brown; roll In powdered' sugar while hot. Dried Apple Doughnuts. Oet the sourest dried apples you rai obtain and the old-fashioned dried kind. Soak in cold water and stew them until soft; sweeten to taste. Make a doughnut dough, roll out and cut Into small round cakes about size of saucer and half an inch thick.

Put on a spoonful of the apple sauce, and turn tho cake over half way. pinching the edges firmly together. Fry them in hot fat, same as plain doughnuts. If eaten while hot. they make a nice dessert, with sweetened cream or hard sauce.

Katrlnka Srinkman's Crullers. Take four eggs, two cups of sugar, third of a cup of butter, third of a nutmeg grated, one cup of sour milk or buttermilk, half a teaspoonful soda, a level teaspoonful salt and flour (pastry), enough to make a soft dough. Beat butter and sugar to a cream. Add well-beaten eggs, then the spice and the soda dissolved In the milk. Have the flour sifted Into a pan or wooden bowl, make a hole in the middle; pour in the Ingredients, adding the milk last.

Stir until stiff, then add more flour, until the dough can be cut without sticking to the knife. Roll out until one-third of an Inch thick, then cut into pieces two inche3 wide and three inches long. Make four or five slits in each cake, not dividing the parts entirely, and weave the strips In and out, or leave them flat, if you prefer. Fry them in fat composed of half lard and half suet, or better still, in vegetable fat. If you have no sour milk on hand, add a little vinegar or lemon juice to sweet milk and use soda, same as with naturally soured milk.

RUNS INTO CURB IN FOG There Was Much Walling and Some Swearing, in Consequence of Derailment. Movtntr in a mysterious WAV Its won rters to perform, the Brooklyn Rapid Transit Company took a snow plow out Into Fifth avenue last nlgnt. jnat.

bo fur a it went, was all right, but the cumbersome plow ran Into a bank of fog at Douglass street, and was derauea. it stayed derailed, in defiance of a wrerk- Ing crew seventeen car loads of trolley passengers for aearly an hour, and made It incumbent upon hundreds of good citizens who did not have their wives with them to enter into a detailed explanation of why they reached home at an unseemly hour. The snow plow was a 1309 model, a stock car that was expected to travel under Its own power to the repair shops at Thirty-sixth street without being blocked, considering that there was not a great deal of snow and no ballots on the ground. The B. R.

T. had Dot reckoned on ths fog. however, and so camo about the mishap. It was 11:30 o'clock when the big contrivance left the car track. It bumped along over the pavements almost into the curb, and then came to a stop as It riveted to the ground.

The passengers on the car behind took it good-naturedly at first, so long as they did not get orders to transfer to the "car ahead." In ten minutes or so they had read all they wanted of the campaign advertisements, and began to get restive. In the meantime the Fifth avenue cars going south were piling up, all filled with theater crowds and men who had been delayed at the office. A string of a dozen ears was held up In quicker time than anyone who uses the line and waits for cars would Imagine possible. After a courteous wait for things to move, the passengers began to pile out and assemble about the derailed snow plow, where a knot of motormen and conductors were wrinkling their brows and giving orders. "Go get Judge Gaynor," shouted one of the passengers.

"He'll fix It." "Xaw." was the response from the other side of the circle. "Hearst would be glad to get it for to-morrow night." "Is there a snow-plow doctor In the crowd?" shouted another. "No. but here's a penknife." This sort of repartee continued throughout the early part of the proceedings. Finally It became monotonous, and it was suggested that the B.

R. T. wrecking crew be sent for. It seemed that word had already been sent, and soon the big wagon with men to carry out the orders arrived. By this time there were more cars blocked in the rear of the snowplow.

A count was taken and they numbered seventeen. They were each filled with as many passengers as one would expect, and the whole line emptied its burden into the street, and the spectators at the scene of effort grow to campaign-meeting proportions. The wrecking crew appeared to be working hard, but did not get much result. Finally a trolley car came up from tho Bouth on the southbound track and they hitched tho snowplow to it with a big chain. The wheels whirred and the big plow budged.

They whirred again and the leviathan moved. A cheer went up from the crowd and the trolley car was urged to greater effort. It got a start, and away went the snowplow, hammering the paving blocks and making more noise than a Hearst meeting. It clattered and banged along the street for about a block, getting nearer and nearer the track. The fog was still thick and the snowplow was in a rebellious mood, but it was finally coaxed over to ihe rails and settled down with a final bump that brought the biggest cheer of all from the crowd.

Then the line of cars started1, and the men without their wives made mental note of all the details of the occurrence. IN GERMAN CIRCLES.
