I bought a sack of it by accident and opened it, 50 I cannot return it. Ever since, I have looked for recipes on how to use it, but luck. Esther Cooke, Pomona, Cal.

Self-rising is an all purpose flour with the salt and baking powder added 50, in using recipes not calling for this flour, just omit the salt and B.P. In most cases it will work out all right. Self-rising four is especially popular in our southern states where, bless them, hot biscuits are still an breakfast item so it is 2 time saver not to have to sift flour with those other items. Dear Nan: I have been buying a salad dressing called Goddess but it just doesn't taste like what we have eaten in restaurants on the west coast, especially San Francisco. Mrs.

M.M., Gary, Ind. Small wonder, You tasted Green Goddess at its best and the name refers to the whole salad. It was created in San Francisco many years ago by Chef Roemer at the old Palace Hotel. He dreamed it. up in honor of the movie "The Green Goddess," then playing to packed houses there.

(Didn't Kathleen MacDonald star in that one?) There use la giving you his original De proportions because they are geared to serve about thirty. Besides, once you know the ingredients you can pretty well go it on your own. The salad itself is all greens, a combination of romaine, chicory and escarole, torn up into not-too-small pieces. Big enough to fork up easily. Until you try thing other than head lettuce only, you have no idea how much more interesting variety of greens can be.

Even fresh spinach when you can get it. They don't all taste alike. The dressing calls for rubbing the bowl with cut fresh garlic, very thoroughly. That isn't enough add a few drops of garlic juice when the dressing is completed. Now in go a few sprigs of parsley, fresh tarragon if you are lucky enough to find any, some chives and a piece of green onion, all chopped fine.

Now you add a few cut up anchovy fillets. Then into good mayonnaise stir. in whatever amount of tarragon vinegar suits your taste. For each serving of chilled salad greens add a good spoonful of dressing and mix lightly. And that is the real Green Goddess.
