SHIRRED EGGS WITH CHICKEN LIVER AND MUSHROOMS EN CASSEROLE 6 to 8 chicken liver 10 mushrooms 1 chopped small onion 3 tablespoons butter teaspoon parsley 1 ounce Rheriy win 6 eggs Saute the chopped onion and mushrooms in the butter until tender. Dredge the chicken livers in seasoned flour (salt and pepper) and saute with the onion and mushrooms until the livers are cooked. Add the parsley and wine; simmer one minute; place in casserole.

7 Break the eggs on top of mix ture, dot with butter. Bake in i preheated oven (350 until eggs are set. Serve immediately. Yield: Four servings. SPEEDT KECE PUDDING 6 ounces rice 1 quart of milk 4 eggs 1 cup sugar 1 teaspoon vanilla Cinnamon Wash the rice, bring to boil in 3 cups salted water and cook until half done; drain and rinse.

Add milk and simmer until rice is tender (30 to 45 minutes). Beat eggs, sugar and vanilla and add to cooked rice. Stir until mixture coats the spoon. Remove from heat and pour into individual dishes or casserole. Sprinkle cinnamon on top.
