Tuesday, May 21, 1996 The Capital Times 3C Pedros Martines football lessons useful in business Ill never forget the day he announced his retirement, Martine recalled. I think he thought he could inspire us by announcing it ahead of (the final two games). It was a cold, foggy November night and the lights were shining down on Camp Randall and he blew the whistle and called everybody in. And Im telling you there was not a dry eye among those 125 guys. It was one of the most emotional things Ive ever experienced.

He was really loved by all the players. Martine, who recently was named to the board of directors of the National Club, remembers McClain as a great recruiter and great organizer. The highlight of Martines two seasons under McClain was beating Minnesota in his final game as a senior, when he helped the team rush for more than 300 yards. The team finished 5-5-1 in both years, but Martine could see the better times to come. After the last game, Martine recalled.

The coaches told us seniors, Its been tough on you guys the last couple of years and we appreciate everything youve done. Youve been the catalyst for everything we think were going to do the next couple of years. And they were sincere about that. At 6 feet and 235 pounds, Martine was the smallest guard in the Big Ten. Success required brains and technique more than brute strength.

And, of course, Martine was among many ex-Badgers who saw both their coaches die early deaths McClain of a heart attack in 1986 and Jardine of heart failure after a heart transplant in 1990. Jardine's death was especially tough on Martine because he had become close to his former coach after becoming good friends with Jardines son. "We used to play golf together, Martine says. He was a tremendous man. And then there was the tumultuous final year under Jardine, in which the Badgers started out 5-0 but lost their last six games.

While attendance rose 49 percent under Jardine, the nice guy coach had just one winning season (7-4 in 1974) and an overall record of 37-47-3. Jardine announced his resignation with two games to go in the 1977 season under pressure not from the Wisconsin administration Athletic Director Elroy Hirsch actually tried to persuade Jardine to stay but due to outside pressures. By Jeff Rtchgals The Capital Times In addition to providing many treasured memories, Jim Martine says playing football in high school and at the University of Wisconsin taught him valuable lessons that have helped him succeed in life. Teamwork is the main thing, the president of Pedros restaurants said in an interview at his west-side restaurant This is a restaurant and were serving 5,000 to 6,000 people a week. You have got to be able to have a good, cohesive unit functioning to get everybody served or youll be going out of business real, real, quick.

The other thing is business is tough. You have to keep hammering away at it. You have to stay on top of things every single day. Martine, a 1976 graduate of Neenah High School, certainly had to endure some tough times after he was recruited by the late John Jardine to play for the Badgers. Martine played sparingly his freshman and sophomore years under Jardine, who resigned at the end of the 1977 season, and then started at offensive guard his junior and senior years under the late Dave McClain.

Its a lot of hours but I love my job, says Martine, who often works 70-hour weeks. Im a very hands-on guy. If I could work in the kitchen all the time I would. All the recipes are mine. We believe in our everything-made-from-s-cratch philosophy.

And weve got what I think is a great staff, people whove been with me for many years. That isnt to say that Pedros hasnt had setbacks. Along with the demise of the Appleton location, another notable bump in the road was when an employee at the Wausau business contracted hepatitis (outside the job) in January 1993, gutting business for a time, even though no one got sick from eating at the restaurant. He followed procedures washed his hands, wore his gloves, Martine says. He didnt know.

He was a victim. And the press crucified the poor guy. TV was there taking pictures as he walked out. And it was tough on business. I had to take a second mortgage on my house and pour a ton of money into the place to keep it operating.

And my employees how many tips are you getting when no one is coming in the door? Martine stresses Pedros local nature. When he has time, he gives back, most recently by taking a spot on the board of directors of the National Club UW athletics fund-raising group. All this leaves precious little time for his favorite leisure pursuits, golfing and skiing, especially since he and wife Colleen, an attorney with Pressentin, Muiphy and Roberts, have two young chil- dren: Meghan, 4, and Jimmy, 2. Theyre the most important -thing in my life, he says. And, like their dad, theyre growing up in the business.

I love to bring them into the restaurants on weekend mornings, dad says. I try to take Sunday off but before mass I may come in and check the books and they count quarters and run around. Id love to have them get involved in the business some time. Continued from Page 1C They were kind of an institution, Martine, 37, says of his parents, both 62. For Sunday brunch in the fall my dad would have a TV set sitting on the brunch line right next to the frying pans so he could watch the Packers.

There was always a crowd. And in our family as soon as we were old enough to pick up a bus tub we were working. When Martine attended the University of Wisconsin-Madison on a football scholarship after graduating from Neenah High School in 1976, he worked at various restaurants and bars during the summers. But during his fifth year at UW (after his football eligibility was used up), his father and a couple of investors opened Pedros Mexican Restaurante in Appleton in April 1981 and he began working there. My last semester Id go to school Tuesday, Wednesday, Thursday, then go up there and work Friday, Saturday, Sunday, Monday, Martine says.

Then the east-side Madison Pedros opened in July 1981. I was working in the kitchen and I was going to go back to grad school I just havent got there yet, Martine says with a hearty laugh. It was around the time the Appleton store was sold to Sergios in 1986 that Martine finally bought into Pedros. There were problems with one of the partners philosophical differences, Martine says. He wanted to bleed us dry.

Im of the belief that you pay your debts and you pay your vendors and then you take care of your business and then it takes care of you. This guy was me first, everybody else second. He didnt want to fix so much as a table. So I came up with some cash and bought into the company and started buying (the investors) tastic marriage, he says. Its become more of a personal thing as time went on.

After carefully analyzing the crowded west-side dining market and identifying a location next to High Point Centre, Martine opened the west-side Pedros two years ago this week. As expected, the location didnt turn a profit its first year but now were exceeding our expectations, Martine says. Pedros sales are in the millions annually. In April, a typical month, the two Madison Pedros combined served more than 35,000 customers, Martine says. Martines future plans include a mix of franchise and company-owned sites, with the Appleton and Green Bay areas as prime sites.

He also has had talks about BARTHOLOMEW, Vera Chrisler, 83 Madison BECKETT, Helen 80 Madison BRADLEY, LaVeme, 80 Sun Prairie BURMEISTER, Jacqueline 66 Madison FULLER, Donald Vincent, 74 Poynette GERMANN, Edward 68 Madison HESS, Arlene 68 Monona MAY, Margaret Elizabeth, 91 Cedar Rapids, Iowa WANTON, Irene 87 Madison TUGGLE, Raymond 84 VeronaMadison WILDEMAN, Fredric C. Fritz, 82 Madison placing a Pedros in an adjacent state. My five-year outlook is that Id like to have eight restaurants, Martine says. I want to take it very slowly, not expand too fast and get into trouble. And Ill never expand beyond the Midwest.

Heller doesnt doubt that Martine will be successful. Jim is very professional, very serious about the business, he says. Martine even missed going to California for the Rose Bowl because construction on the west-side Pedros was at a critical juncture. But I did get to see the game and I did go downtown and help celebrate, he says with a chuckle. Martines recipe for success is simple: hard work, good people and quality product.

We have the bar and grills downtown, the Country Kitchens and Dennys, and then you jump all the way from there to the fine dining. There is nothing in that middle-of-the-road family dining niche but pizza places. About 18 months after their first contact, Heller opened the Dells Pedros under a standard 20-year franchise deal. Probably my proudest moment was. when we signed that deal, because its a real compliment when a small business has somebody who would want to take its concept and use it to open their own business, Heller says.

Heller says its been an uphill battle to profitability, but he has no regrets. Despite the hassles of running two restaurants hundreds of miles apart, especially during Wisconsin winters, Martine says he couldnt pass up the opportunity. It was a good location, we got a good deal and I took a chance, he says. The Wisconsin Dells Pedros was not something Martine set out to do. Instead, Tom Heller, owner of Monks Bar and Grill in the Dells since 1982, approached Martine. The two had no prior relationship.

Heller knew Pedros had great food from eating there, and he says his accounting firm had spoken highly of Pedros. And, says Heller, Pedros could a son, Charles; and two brothers, James and William.
