The Boston Chapter of the Chaine des Rotis-seurs gourmet society has probably smashed every remaining gastronomic taboo. Its dinner last October showcased an appetizer of goose liver in three forms, "one bound in cabbage and dipped In poppy seed, another rolled in black pepper, the third rolled In brioche and fried. The sauce was a blend of bittersweet chocolate, Port wine, Sherry vinegar and vanilla oil." Charles Perry, Los Angeles Times cause consumers said they loved to eat Oreos "by the handful." Yes, gamma globulin is prepared from blood. But the AIDS virus is not transmitted by it. All viruses are killed in preparation of the globulin. Your child got a special kind of gamma globulin, one made from the blood of people who had high levels of antibodies to the chickenpox virus (varicella-zoster virus). That explains its name, "varicella-zoster human immune globulin." That's what all gamma globulin is: antibodies.

Your child will not come down with AIDS. In any case, he is wasting precious time delaying resolution of these questions. I can think of nothing more important to this young man right now than a thorough examination. Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder and baking soda.

Add chocolate chips, Hershey bar and nuts. Roll into balls and place two inches apart on a cookie sheet Bake for 10 minutes at 350 F. Makes 112 cookies (recipe may be halved.) Personal note to the Howards: It's easy to get that "roasty tasting" flavor you requested. Simply toast the nuts before adding to any recipe. If chopped, watch them carefully because they burn quickly.

He went to tryout camps anyway and gave it his best shot Sad to say, this was while he had mono. In the three months since then, he has been very fatigued. Could his fatigue be linked to disappointment from the tryouts, or can mono hang on this long? He has seen a doctor for blood tests, and all was OK Yet the exhaustion continues. Any ideas? Grandmother Early mono produces obvious signs sore throat, swollen neck nodes and fever. Fatigue is another key symptom.

But this should be over within a few weeks. Only a few patients have serious complications, such as spinal-cord or bone-marrow disturbance. A very few have lingering fatigue, spleen enlargement and liver problems. I am sure you have heard stories about "chronic fatigue syndrome," in which a former mono patient develops a wiped-out feeling long after recovery from the infection. Attempts to link this to the old mono infection have failed.

No one is ruling it out, but most experts deny any such connection. Your grandson defied the rules by engaging in a vigorous sport during the acute mono stage, with its spleen enlargement and the rest. I can't speculate on whether anything serious occurred at that time, or whether, as you suggest his present lassitude is part of a depression over his interrupted baseball dreams. PERPETUAL CAHt PHUVIUtU PARK SETTING the steaks and yes, you have guessed it there was a flapper pie. "On Sept 25 last year we celebrated our 50th anniversary, all because of a flapper pie." For Jocelyne Ross of Victoria, thanks to Helen Barry (also of Victoria) for the following answer: achiote seeds, and other Mexican spices and chilies are available at Las Flores International Foods at 1123 Haultain Victoria.

REQUESTS From Helen Caton of Sooke: "I hope someone has a recipe for pickled onions I used to make 53 years ago. I can't remember if we sprinkled pickling salt on them to sit overnight, or if we put them in a brine. We packed them uncooked in jars the same as dills (cucumbers) the onions were crisp, and were delicious sliced on cold roast sandwiches." From Marj Hodges of Victoria: "I have a request for a recipe for watercress and almond soup." (Hodges first tasted this soup in the Papillote restaurant in Vancouver, but perhaps someone here has a good recipe.) Requests and recipes can be mailed to Lost and Found, The Times-Colonist, 2621 Douglas St, Victoria V8W 2N4, or dropped off at the same address. Please print your name and address, and Include a telephone number. Names will be published (but not addresses other than area).

(Or until you can smell them the old way and the best) Cool on the sheets for a minute, then remove to racks to cool. Store in sealed container with waxed paper between the layers. Yield: 3 dozen.

By the way: Remember we were asking if anyone knew the origin of flapper pie? Betty Barker of Sidney, and Iris Kellerman of Youbou both agree that they first saw the recipe on a box of Christies Honey Graham Wafers, some 30 years ago. And here is a truly romantic story from G. Cecil Walkey of Duncan, with his experience of flapper pie: "I cannot tell you how or why flapper pie was invented. But I do remember it as the favorite pie in my home (in Pincher Creek, Alta.) during my high school years. Whenever there was a party or one was to be rewarded a flapper pie was produced.
