Hopf, 1114 Jefferson Avenue. 2 cups cranberries 1 cup boiling water 1 teaspoon gelatin 1 tablespoon cold water 1 cup granulated sugar Juice of lemon 1 egg white Cook cranberries in boiling water until soft, about eight minutes. Force through a sieve and discard cranberry skins. Soften gelatin in cold water, then add it with the sugar and stir until dissolved. Add lemon juice and eool.

Beat egg white until stiff, but not dry, and fold into the cranberry mixture. Pour into freezing tray of automatic refrigerator and freeze with temperature control set at highest point. When is frozen to a mush, Stir well, then continue freezing. This recipe made six to eight portions. One servings.

Add the whipped cream, cherries, olives and citron. To one quarter of this mixture add the crushed pineapple. Place this pineapple mixture in the bottom of a round hollow center mold and cover with the remaining mixture and freeze.

Arrange lettuce on round chop platter and unmold salad. This salad with the red cherries and green olives makes a gay combination for Christmas.
