Gfc &ctsMm Wizpubiicnn FRIDAY MORNING, DECEMBER 14, 1928 HELPING THE HOMEMAKER By LOUISE BENNETT WEAVER 1 i Crabflake Cocktail Roast Turkey Mashed Potatoes Buttered Carrots Celery Glblet Gravy Cranberry Sherbet , Escalloped Oysters Bread Salem Orange Marmala - Frozen Fruit Salad - Pumpkin Pie and Nuts Whipped Cream Coffee Coffee CRABFLAKE COCKTAIL FOR 12 2 cups crabflakes, flaked apart with a silver lork, 2 cups or diced celery, 1 - 4 cups finely chopped sweet pick' les, 1 teaspoon salt, 1 - 4 teaspoon pap rika, 1 cup stiff mayonnaise, 6 - pim - iento stuffed olives, cut in halves crossways. Mix 1 - 3 the mayonnaise with the r.rabflakes, celery, sweet pickles, salt and paprika. Place portions in small class cups lined with lettuce leaves. Top with the remaining mayonnaise and the slices of pimiento stuiiea olives. ESCALLOPED OYSTERS, SERVING 12 1 quart small oysters 4 cups ground cracker crumbs 1 - 2 teaspoon celery salt 1 1 - 2 teaspoons salt 1 - 2 cud butter, melted ' 1 cup oyster juice (drained from the oysters) 2 1 - 2 cuds milk Carefully pick over the oysters and remove all shell particles. Mix the crumbs, salt, celery salt and melted butter. Sprinkle one - half cup of the crumb mixture on the bottom of a but - terede baking dish. Add a layer of ovsters. Add a layer of crumbs and another layer of oysters. Sprinkle the remainine crumbs over the top. Pour the oyster Juice and the milk over the layers as they are being arranged in the baking wish. Bake in a moderate ovpn for 30 minutes. Serve In the dish in which baked. SALEM ORANGE MARMALADE 1 grapefruit Water 1 orange Sugar 1 lemon Wash and slice the fruit. Remove all seeds. Put the sliced fruit through the food chopper. Place a pan under the chopper to catch any juice which is liable to run out. The juice must not be wasted. Measure the chopped fruit and juice and add 3 times as much water. Let stand over night. In the morning boil for 5 minutes. Let stand for 24 hours. Measure and add equal parts of sugar. Boil slowly and stir frequently for one hour. Pour into sterilized jars or glasses. When cold, cover with melted paraffin. FROZEN FRIUT SALAD 1 tablespoon granulated gelatin. 4 tablespoons cold water or fruit juices. 1 - 2 cup salad dressing. 1 cup stiffly whipped cream. 1 - 4 teaspoon salt. 2 cups diced canned fruit, peaches, pears, white cherries, red cherries. Soak the gelatin in the cold water for 5 minutes. Dissolve over a pan of hot water. Cool and add to all the rest of the Ingredients. Freeze in a freezer or in one of the trays of the mechanical refrigerator. Serve on lettuce leaves . and top with salad dressing. Select deep pie pans for holding pumpkin pies. Those congregations of the latter church which did not enter the merger are tha ones which changed their name to Evangelical Congregation, and which are now receiving formal title deeds to their properties. The Frackville church is listed as Evangelical Con gregational, but it may eventually to over to the mergerites, or Evangelical church, as it did not send a delegate to the last E. The estimate of the babies saved is based on the death rate prevailing in 1921 before the Sheppard Towner bill providing for state and federal care for mothers and infants was passed. According to the bureau's figures the 1928 baby has just twice the chance of living out his first year' that a baby in 1921 had. The children's bureau has co - operated with the states in the development of an educational - program of the health of mothers and babies. Last year was the sixth that the funds created by the maternity and infancy act have been available. Forty - five states and the territory of Hawaii participated in the campaign to raise healthy and happy babies and to save the lives of mothers. Thousands of pre - natel and child health conferences were held. Nurses on state staffs made more than 600, - 000 visits to homes of expectant mothers, helping them plan for better pre - natal care for themselves and scientific care for their babies.
