COURIER NEWS Delectable Meringues Treat for Labor Day By CECILY BROWNSTONE Associated Pres* Food Editor Give your family an old-fashlon- e d treat over Labor Day weekend and serve crisp delectable merin- sues with vanilla Ice cream and strawberry sauce. The meringues «re easy to make, using the follow- recipe calling for light corn - f you have an old-fashioned crank freezer, you'll want to try this recipe for vanilla Ice cream. L£l Father turn the crank and the kids lick the dasher — those are chores "one of them will forget! For ll »e sauce use quick-frozen strawberries. . ' ' Meringue GluceIhfrcdlent: 4 egg whites-, V, teaMethod: Beat egg whites until frothy; add salt. Continue beating until stiff but not dry. Heat corn syrup to boiling, pour in a fine stream over egg whites while continuing to beat. Add vanilla and beat until very stiff. Shape with a spoon !n small mounds on cookie sheets covered with unglazed paper. Plate In hot (425 dgrees P.) oven, close door and turn heat oft Immediately. Leave In oven for several hours or until the oven Is cold and meringues are crisp and dry. Remove from paper and place on cake rack, uncovered, until serving time. Put together In pairs with ice cream In center. Top with quickfrozen strawberry sauce. Makes c to 8 servings. Vanilla Ice Cream (Crank Kretzer) Intreiiierits: 2 cups milk scalded beaten. 2 teaspoons vanilln, VI ten- spoon salt, 2 cup extra sweet white corn syrup. 2 cups coffee cream. Method: Gradually stir milk in to eggs. Place over hot (not boiling) water and cook until mixture coats a silver spoon. Add vanilla, salt, and corn syrup. Blend thoroughly; cool. Add cream. Freeze in crank freezer until hnrd to turn, using 8 parts of crushed ice to 1 part of ice cream salt. Makes 2 quarts. ;. Add seasonings, cl der vinegar and tomato soup to l!i cups bean liquid. Brown meat and onion in cooking fat. Add to sauce. Alternate layers of drained beans and meat In a 3-quart casserole. Top with slices of bacon Bake in hot oven (400 degrees) 45 minutes. Italian Salad i. (Maket y t cup) 'A cup cider vinegar ',1 cup salad oil 1 teaspoon salt 1 teaspoon sugar U teaspoon pep|>ei' ',4 teaspoon paprika 1 garlic clove, minced 14 teaspoon oregano Combine all ingredients and mix together, chill thoroughly.
