g The VANCOUVER SUN: Thur., Sept. 17, 1959 SURE-FIRE HIT in any family is roast turkey, done to a golden crackling brown. While it's the traditional main course on feast days such as Thanksgiving or Christmas, its low price makes it a favorite any day of the year. COLORFUL COCKTAIL BRUNCH PARTY STAR This chilled fruit cocktail is an ideal "brunch" party appetizer. Combine orange sections, grapes, pineapple cubes and place in sherbet glasses. Chill thoroughly. Just before serving partially fill each glass with chilled gingerale or lemon-lime pop. Gala Touches For Porridge Prepare rolled oat porridge as package suggests. Stir in Vt cup dates or raisins while porridge cooks. Garnish each serving with dates or raisins. Or sprinkle chocolate bits over cereal. Serve with sugar, milk or Sunday Brunch Offers Hostess Opportunity Breakfast Party is Pleasant Gathering By EDITH ADAMS One of the easiest and most pleasant ways to entertain friends is at a breakfast party. Often the timing of this meal overlaps with lunch time, and almost automatically it becomes a "brunch." These Sun Cottage recipes will help you choose your main course. CORN AND SAUSAGE BAKE 1 pound sausage meat 3 cups milk 1 teaspoon salt cup yellow cornmeal 3 eggs, separated cup shredded Cheddar cheese Fry sausage meat until browned. Drain off fat and save 1 tablespoon. Remove meat from pan. To the 1 table spoon fat, add 3 cups milk and 1 teaspoon salt. Heat to the boil. Stir in cornmeal and cook, stirring for 3 minutes, or until thick. Add small amount of hot mixture to well beaten egg yolks. Return to hot mixture and stir well. Add cooked meat and fold in stiffly beaten egg whites. Spoon into baking dish. Sprinkle cheese over all. Bake in moderate oven, 350 deg. F., for about 40 minutes. Serve immediately. Makes 4 to 5 servings. BACON SOUFFLE 1 cup flour 1 tablespoon sugar 1 teaspoon Angostura aromatic bitters 2 eggs, slightly beaten 2 cups milk lb. thickly-sliced bacon CALORIES IN TOAST bowl. Blend together Angostura, eggs and milk and add gradually to dry ingredients. Set aside for 1 hour. Dice and fry bacon lightly. Drain on absorbent paper. Add bacon pieces to batter. Pour into well-greased shallow baking dish ( 11x7x1 ',&) or use skillet. Bake at 400 deg. F for 30 minutes. Cut into squares and serve immediately with preserves or thawed berries sweetened with 1 tablespoon sugar. Serves 4. WALLA - WALLA WAFFLES 1 cup sifted all-purpose Hour 3 teaspoons baking powder U teaspoon salt 1 cup yellow corn meal 1 cup finely diced cooked ham 2 eggs, separated 1 cups milk 6 tablespoons melted butter or margarine 1 cup drained kernel corn Mix and sift flour, baking powder and salt. Stir in cornmeal. Beat egg yolks until light. Combine with milk. Stir into cornmeal mixture. Add melted butter or margarine and mix well. Stir in corn and ham. Fold in stiffly beaten egg whites. Bake in hot waffle baker, according to manufacturer's directions. Makes 6 to Toast has the same caloric value as bread approximately 75 calories per one ounce slice. Toasting merely converts some of the starch in the bread into simpler carbohydrates and removes some of the moisture. This produces the golden-brown, crisp, flavorful slices of toast.
