D8 CALGARY HERALD March 27, 1991 FOOD From-scratch pyrogies cheap fun Recruit young helpers on spring break to roll dough If so, you are invited to Welcome Wagon's PLUS FIFTY SHOWCASE Pablum marks 60 bland years It's been keeping babies happy for 60 years, and it all came from the fertile brains of researchers at the Hospital for Sick Children in Toronto. The hospital and the Mead Johnson company had struck a deal in the 1920s to collaborate on baby food research. Three researchers tried a mixture of bone meal, wheat meal, yeast and other tasty ingredients, and presto Pablum was born. Their research was published in 1930, the company went into Pablum production, and soon the researchers were getting royalties, which they channelled back into research. Sales have just kept growing.

These made-from-scratch pyrogies or varenky, as they are sometimes called, require no special equipment other than a pot to boil the potatoes and a good-sized table to roll and fill the rounds of dough. Home-made pyrogies Years ago, Jean Metiak gave me this authentic Ukrainian recipe. Vz cup cold mashed or riced potatoes 2 tablespoons shortening (or other fat) 2 egg yolks Vz cup lukewarm water Va cups flour 1 teaspoon cream of tartar (no substitute) 1 teaspoon salt Potato filling: 2 cups cold mashed seasoned potatoes 1 cup or more cottage cheese Mix cold mashed potatoes, shortening and egg yolks, thoroughly.

Add water and mix well. Stir together the 1 cups flour, cream of tartar and salt; stir into potato mixture. This makes a very soft dough. In humid areas, it may be necessary to add more flour, bit by bit, until dough no longer sticks to hands. Dust board with a little flour.

Knead dough lightly, cover with an inverted bowl and let stand for 10 minutes. To make filling: Season potatoes with salt, pepper, onion and butter, as you prefer. Stir in cottage cheese and grated cheese. The filling should be thick and stiff. Pull off small egg-size bits of dough and roll each on a lightly floured surface until it is a thin round, 2Vi inches6 cm in diameter.

(Young helpers are particularly useful for this part.) Place spoonful of filling in centre of each round of dough. Fold over and press edges together firmly. Set on floured board or a tea towel. Cover with a tea towel to prevent drying. To freeze: Flour all sides and freeze on tray until solid; pack in freezerproof bags.

To cook: Drop a few, at a time, into a large pot of rapidly boiling, lightly salted water. (Use fresh or frozen; do not thaw.) Stir with a wooden spoon to separate pyrogies and prevent sticking. Continue cooking until pyrogies are well-puffed and floating on top of water. Remove to colander to drain. Place on serving dish.

Sprinkle or toss with buttered toasted crumbs. Serve with plain low-fat yogurt or sour cream, chopped crisp bacon, pickled beets and dills. Left-over pyrogies come back to life, if fried in a bit of bacon fat. Fattening but good. niiir.
