THE tomato is a valuable food from the health-building standpoint and its use is steadily increasing. Regardless of whether the vegetable is used raw or canned, or -whether it is used In the form of canned tomato juice, it retains its full value. The reasons for the popularity of the tomato are easily understood. In the first place, people like its flavor; in the second place. it is comparatively inexpensive; and in the third place, the health angle has affected its use to.

some degree. Also, by using the canned form, tomatoes may be used the year around, which means that the sea son is not as restricted as would be the case if we could enjoy tomatoes only during the Summer sea- a. immni mwimtmmmy, fefeRVlg null r-TTm WITHOUT KtwsAs CHARGE! It is my opinion that tomatoes have a distinctly beneficial effect upon the liver, and those with sluggish livers will do well to take more tomatoes. While most! people consider the tomato a vegetable, it is best classed with the acid fruits and apparently it is the slight acid content which stimulates the liver.

The tomato is, grouped, with the alkaline-forming foods, possessing the basic salts which have an alkaline reaction within the body. It is an excellent source of vitamin and this latter fact accounts for the use of the juice in the diet of infants. The vitamin of the tomato Is' not destroyed by canning. The food also supplies vitamins A and B. In combining tomatoes I suggest that you use them with protein foods such as meat and Ash, and with non-starchy vegetables.

The acid of the tomato seems to aid in the digestion of fish, and I therefore suggest that when serving fish you also use tomatoes; either in the form of salad, or in the stewed form. Tomato juice is widely used in the feeding of infants, being used the same as orange juice, for the Dtirnns rif annnlvinff th vitamin lacking in milk. Hownwr. it I equally good for people of all ages. i suggest urn you try taxing a glass of this rich, red juice first thing in the morning, or during the middle of the afternoon, or last thing at night before going to bed.

Many patients have reported to me that this aimnle nlan in. creases their sense of general well-being, so that they feel better when taking the juice regularly. use tomatoes sliced in salad; stewed; in the form of tomato soup; or as a flavoring' agent for other dishes such as stews.
