Absolutely and assured- ly yes not all fjods are fast cooking anyone can be a fast gourmet cook. Take hamburger, found under many names in almost every great cusine of the world. It's America's favorite, most used, though often mis-used meat Quick cooking certainly, but if you season with care and start with the best, it can be superb eating, gourmet fare in every sense of the word. Buy top-grade beef, sirloin, filet, top round, or rump.

Have it ground before your eyes or buy from a butcher you trust. Never, after grinding, leave it unfrozen in your refrigerator more than one day. How to season? How to cook? There's no end to the versatility of this meat. But here are a few of my favorite quick, easy ways: SALT, PEPPER Mix one pound top round with one tablespoon brandy just before forming into four hamburger patties to broil. Sprinkle after broiling with fresh ground pepper and salt.

Cook, stirring constantly, over low heat' until gelatin is dissolved. Do not boil. Remove from heat; add vanilla and orange rind. Cool until mixture begins to thicken. Meanwhile, beat egg whites until foamy; gradually beat in remaining sugar and continue beating until stiff.

Whip cream. Fold gelatin mixture into egg whites. Fold in cream, then dates and coconut. Turn into 6-cup mould; chill until firm. Unmould to serve.
