at at at at at at at at at at at 4 tHE Maria, Times, Wednesday, September 9, 1970 Recipe File, September Is 'Pancake Month' September is National 'Pancake Month. While many think of the pancake as something to be served with syrup and bacon for breakfast, there are an infinite variety of ways to vary the fare for a. first course, a dinner main dish or delectable dessert. In Russia, one of the most popular dishes is "bliny," raised yeast pancakes which most often are served as a first course with caviar Or smoked salmon and dollops of sour cream. Frequently they are stuffed with caviar, sour cream, finely chopped onion and hard boiled egg and rolled up.

A basic recipe for bliny follows; Bliny 4 tbsps. butter cups milk 3 cups sifted all-purpose flour 1 tsp. salt 3 tbsps. sugar 3 eggs 1 pkg. dry yeast dissolved in cup warm water Butter for frying Add 4 tbsps.

butter to milk and scald milk. Set pan in cold water to cool. Sift together flour, salt and sugar. Beat eggs by hand in a large bowl. Stir in milk and butter mixture (cooled).

NOTE: Russians use an earthern ware bowl and a wooden spoon. Gradually add the sifted dry ingredients. The batter will be lumpy. Stir the dissolved yeast and warm water into the batter. Cover with a tea towel and let rise for an one hour in a warm spot.

Beat batter thoroughly again, cover and let rise for about one half hour or until it rises to previous height. Drop batter onto a lightly buttered griddle hot enough to brown the bliny on one side in about 40 to 45 seconds. When browned on both sides, stack on a warm plate in a warm oven. Serve at once with melted butter, sour cream, caviar or smoked salmon. Makes about 8 servings.

NOTE: Leftover batter may be stored in the refrigerator for one day only. It should. be allowed to come to room temperature and rise somewhat before using. Russian' blinchiky, a diminutive of bliny, is a smaller pancake usually served as a dessert. Blinchiky 4 eggs 1 tsp.

salt cup melted butter cup milk cup cup all-purpose 2-3 tbsps. butter for frying, preferably unsalted 1 egg white, lightly beaten Beat eggs in a bowl with salt and sugar. Add melted butter and milk. Gradually mix in flour. Batter should be thin.

Melt small amount of butter over low heat. Pour a small amount of batter into the pan, enough to make blinchiky 2 to 3 inches in diameter. Cook on one side only. Put a small amount of thick preserves on the cooked side, fold over and seal edges with lightly beaten egg white. Place seam side down and fry in unsalted butter.

Sprinkle with sugar and serve with sour cream. Makes about 6 servings. Stuffed Pancakes Make batter as for blinchiky but omit sugar. Make the pancakes by dropping a small amount of batter into the pan and rotating the pan to spread it about. NOTE: There should be just enough batter to coat the pan.

Turn the. pancake over almost immediately and remove when barely done and still limp. Stuffing 1 lb. boiled beef, ground 2 medium onions, chopped 2 hard-boiled eggs Salt and Pepper cup beef bouillon Grind beef. Add onions and eggs and grind again.

Season with salt and Pepper and add enough bouillon to moisten. 4 When pancakes are made, put small amount of stuffing in center of each. Fold the sides over the stuffing. Add more butter to the griddle and put pancakes back in seam side down. Cook until crisp and brown.

Makes 6 servings. The Austrians are noted for their cottage cheese pancakes which make a fabulous dessert. Frequently, though sweet, they are served as a main supper dish. Add egg yolks beaten with sugar and stir to a thin pancake batter. Lightly butter griddle and heat. Pour in enough batter to cover thinly and rotate pan to spread it. Lightly brown each side. Keep warm.

Makes 12 pancakes. Filling cup butter cup sugar 3 eggs, separated lb. creamed cottage. cheese 2. tbsps.

Place filled pancakes in buttered 9-inch square baking pan dusted with bread crumbs. Beat together remaining egg yolks, sour cream and milk and pour over pancakes. Bake at 350 degrees approximately one half hour. Makes 6 servings. From Germany comes the famous potato pancake which goes so well with sauerbraten or almost any variety of meat.
