Duckling: Neapolitan Style (4 servings) One Long Island duckling, 4 to 5 pounds, ready-to-cook weight. teaspoons oregano, 1 teaspoon suit. '•7 teaspoon pepper. 1 teaspoon minced parsley, 2 tablespoons grated Parmesan cheese. 1 clove garlic, finely minced, 2 tablespoons melted butter or margarine, 10- ounce can tomatoes or 1 cup chopped fresh tomatoes. 3-ounce can sliced broiled mushrooms, 1 tablespoon cprnstarch, 2 tablespoons cold water or red table- win 1 ;. Add contents of cans of tomatoes nnd mushrooms, ppuring around duckling quarters. Buke in .slow oven, 325 degrees P., basting about every 15 minutes, until duckling is tender, iibout \\' £ hours.
