Duckling: Neapolitan Style (4 servings) One Long Island duckling, 4 to 5 pounds, ready-to-cook weight. teaspoons oregano, 1 teaspoon suit. '•7 teaspoon pepper. 1 teaspoon minced parsley, 2 tablespoons grated Parmesan cheese. 1 clove garlic, finely minced, 2 tablespoons melted butter or margarine, 10- ounce can tomatoes or 1 cup chopped fresh tomatoes. 3-ounce can sliced broiled mushrooms, 1 tablespoon cprnstarch, 2 tablespoons cold water or red table- win 1 ;. With aharp knife cut duck skin along center of breast from neck to vent, Run knife between htyer of skin and fat and flesh, pulling skin tway from flesh at the same time. Cut skin where necessary, but try to keep flesh intact. Cut duckling i n quarters, using poul try sheari and n sharp knife. Ar- range quarters m shallow baking pan, about 8x12 inches. Combine and mix well the oregano, suit, pepper, parsley, cheese and garlic and sprinkle evenly over duck quarters. Sprinkle with molted butter or margarine. Add contents of cans of tomatoes nnd mushrooms, ppuring around duckling quarters. Buke in .slow oven, 325 degrees P., basting about every 15 minutes, until duckling is tender, iibout \\' £ hours. When duckling Is (lone, drain .sauce into small .saucepan. Combine and add cornstarch and water, - Add to sauce and cook, stirring constantly, until thick und clear. Shape Into 6 putties, wrapping each with slice of bacon. Place on broiler ruck. Place cooked carrots and pens In broiler pan. Place broiler rack over vegetables and insert broiler pan allowing 2 inphes between .surface of meat and heat. Broil the patties on one side until they are brown. 8 to 10 minutes.
