"I rode my bicycle built for two down Northwest Highway to the Royal Coach Inn, lied about my age and got a job in the kitchen preparing the food for the 5:30 a.m. daily morning breakfast buffet," he recalls. "I had to leave the house on my bike at 4 a.m. to make it to work on time every morning.

I had started cooking with my mom at the age of 6, so I had a good idea of how to prepare the basics." Miller says County Line came about when a group of Texans including co-founder Bruce Wal-cutt, who died in 2006, as well as Rick Goss and Ed Norton expressed their love of heritage by offering high-quality barbecue and sides in generous portions at reasonable prices. Along with that came table and bar service at, of course, historic locations. When asked what advice he would give to those hoping to duplicate this success, Miller is careful to put city permits in perspective. "There are so many great chefs and restaurateurs out there that can prepare incredible dishes, but when you come to Austin, that alone won't get you open to the public," he says. "Do your planning, do your research, and hire consultants to help you get through the permitting process at the city.

You have to have substantial capital earmarked for this process, because it can take months on end to get all the approvals needed before you ever start construction, and you have the inspection process to go through, which is yet another mountain you have to climb." Another common theme: Keep your staff loyal. "You let them be a part of the decision-making process," Miller says. "Be it anything from a money-saving idea, to a better way to prepare something, to listening to their feedback on our customers' wants and needs. If we did things the way we did them 40 years ago, we would no longer be in business. Our County Line team's ideas, inventions to save time and labor, and feedback have been the inspiration for change that sustains us today." As for customers at the pair of high -traffic spots, Miller talks a lot about creating memories as much as meals.

"Many times I find myself talking to a complete stranger on a plane, at a meeting, or even another restaurant, and they start telling me about a great memory they have about eating at a County Line," he says. "We have longtime customers that have called and had family members in their final hours, and they have requested County Line for their last meal. When we surprised the family, and showed up at their home with the food, there were tears of joy at a time of sadness." Over the years, Miller has added salads and grilled items, as well as a fryer for queso fries. He has offered a to-go menu and catering. He has even dared to update the much-loved decor.

"In the beginning, we had 1940s artwork on the walls Chesterfields ads and old Life magazines," he says. "We were playing Benny Goodman and big band music. Then the customers who knew what that was were not going out anymore or dying, so we switched all that out for a more contemporary road-house look and feel." The Tokyo Steakhouse came with "Polynesian Drinks" at 7113 Burnet Road.

Hunan Chinese Restaurant at 9306 N. Lamar Blvd. was a gustatory triple threat: "Hunan Szechuan -Peking." A Vietnamese place opened in 1976, possibly part of the post-war Vietnamese diaspora. You can't get away from a few 1970s concept places such as Magic Time Machine, 600 E. Riverside, where servers dressed in fantasy costumes and a good time was mandatory.

The "All-new, Fun-filled, Unique" youth-magnet where Joe's Crab Shack now sits on East Riverside Drive -invited you to "Dance in Austin's Funkiest Discotheque." Another memorable concept: The Barn, a complex of agricultural buildings by the railroad tracks where Shoal Crossing Event Center now sits that served big hunks of cheese for appetizers. It was paired by owner host Jack Ray who also owned the Feed Lot -with a paddlewheeler that plied Lake Austin, attended by "Southern Belles." Some old, comfy outfits were already in expansion mode, for instance Catfish Parlour, which in 1975 already had two locations, one on Ben White Boulevard, the other on Research Boulevard. What about our three anniversary celebrants? Fonda San Miguel isn't listed in the 1975 or 1976 directories, although it was already advertising in other publications. Thundercloud Subs is listed singly at 1608 Lavaca but owners didn't pony up for a display ad or even boldface type. The County Line was up front about serving: "Good Old-Time Steak and Bar-B-Que" on Bee Cave Road.

"For Directions Call." -MICHAEL BARNES pjrt SIGHTS Ctus as 1932." Not only that, but: "Air Conditioned Year Round." "Since 1897" reads the ad for Lung's Cocina del Sur on West Anderson Lane. The Chinese-American Lung family started out downtown with a cafe offering just American food, then later moved on to Chinese and Latin American cuisines, as well as a line of sandwich shops. Moving on from the Big 3 of Old Austin food, one South Lamar eatery makes no bones about its simple fare: "Bag of Chicken." Seafood was making inroads deep inland. Christie's Seafood had opened a huge restaurant with rooftops angled like sails right on Lady Bird Lake (then called Town Lake) where the Hyatt Regency Austin now rises. Meanwhile, the Capitol Oyster Company offered nightly Dixieland music at 219 W.

15th St. Many of those aforementioned steak places also carried seafood in the "surf 'n' turf" tradition. Also, like many American cities, Austin hosted an array of Italian eateries. Among them were Piccolo's Dining Room and Lounge at 309 W. Fifth the Red Tomato Italian Food and Drink at 16th and Guadalupe streets, Ferrari Italian Cuisine at 3400 N.

Lamar and Victor's Italian Restaurant, open since 1942 at 2910 Guadalupe St. Some restaurateurs in this food group offered a touch of pizzazz: Lenzo's Italian Cuisine broadcasts "A Truly Italian Experience," while Gondola House was the choice "For Real Authentic Italian Food Prepared and Served in a Real Italian Atmosphere." Lastly, Rome Inn at 2900 Rio Grande St. tempted students with "Imported Wines." Perhaps that's one reason it was later best known as a legendary music venue. A dozen or so white-linen spots had opened by HID PQi So what competition did Fonda San Miguel, Thundercloud Subs and the County Line BBQ face when they opened their doors 40 years ago? A peek at the Yellow Pages for 1975 and 1976 gives us fresh clues, sometimes revealed in bold clip art and chirpy advertising copy. Start with what's well-remembered: Steaks, barbecue and Mexican food.

Steaks and barbecue were often announced via Western themes: Big Wheel, Big Texas, Old Texas Trail, Branding Iron, Broken Spoke, the Back 40 and Feed Lot -the last one: "An Experience in Atmosphere Under the Stars on FM 2222." The unforgettable four Nighthawk restaurants, among the first in town to integrate behind and in front of the counters, lured diners with "Famous for Corn-Fed Choice Steaks since 1932." The Frisco is the only one of the group to survive, albeit in a new location. It's telling that the display ads for these older spots often bear no street addresses, instead just "Oak Hill," "Pflugerville" or "Interregional Service Road," as if country driving directions were enough. Some of the grand old Tex-Mex places are still with us, including El Ran-cho, founded by Matt Martinez, back then located at 303 E. First St. and "Recommended by Time Life Books, Gourmet Magazine, Continental Airlines Magazine and the Herald Examiner By a Restaurant Critic." El Gallo, still on South Congress Avenue, was matched by El Gallo del Norte on Huntland Drive, near the newly opened Highland Mall, Austin's first indoor shopping gallery.

El Patio, as many will attest, has changed almost not at all on Guadalupe Street. Among the most missed Mexican spots for older locals is El Matamoros, known to regulars as "El Mat." It had been busy at East Fifth Street and East AvenueInterstate 35 since 1947, serving its "Famous Crispy Tacos." Norman Eaton's Polonaise Restaurant served Continental cuisine: "Elegant Dining Overlooking Austin from the 23rd Floor of West-gate. For Visitors a Must. Dressy Casual." La Colombe French Restaurant at 1504 Rob-inhood Trail claimed to be "Austin's Most Elegant French Restaurant" with "Cocktails for Your Drinking Pleasure." Far south near Slaughter Creek stood the Country Estate Restaurant and Garden: "Just Like a Country Club Only Better." Closer in open since the 1940s was Green Pastures Restaurant and Bar.

Koocke family owners wanted you to know back then about the "Excellent Wine List," "Festive Sunday Buffet" and "Preferential No Smoking and Smoking Areas." Forke Flagg Ltd. of Austin attempted to "Introduce You to Austin's Finest Dining and Entertainment World," also located on mall-friendly Huntland Drive. The Veranda at 1301 Lavaca a New Orleans-style restaurant, bar and discotheque, saw itself as "A Little Dressy, a Lot of Fun." The Old Vienna at 801 Rio Grande St. also didn't want to sound frumpy: "Elegant but Exciting, Formal but Fun" with "Plenty of Parking." The Galleria in Jefferson Square served "Excellent Continental Cuisine at Very Moderate Prices" as well as tantalizing "Al Fresco Wining and Dining on our Parisian Terrace." And who could forget the Villa Capri and its "Nightly Entertainment at the Caravan The Las Vegas-inspired palms that decorated this must-stop motel and nightclub now oversee the Long-horns' football practice field on Interstate 35. Tantalizingly, a few Asian and Middle Eastern outlets were open in the 1970s.
