Thin slices of cold veal loaf add considerably to the cold cuts tray, or to the salad plate on warm evenings.

The cold loaf also goes well with creamed potatoes and second hot vegetable. And, of course, everyone likes hot veal loaf with or without a sauce or gravy. The preferred cuts for veal loaf, coming from the shoulder and the shank, keep the cost within bounds. The addition of vegetables, eggs, crumbs and milk extends the meat, and improves texture and flavor. Marjoram, savory or thyme seasons today's Savory Veal Loaf One pound shoulder or shank veal, ground twice Two ounces suet or salt pork, ground twice One-third cup minced onions -third cup minced green pepper or parsley.

Combine the ground meat mixture in a mixing bowl with the minced vegetables, seasonings, marjoram or other herb, beaten egg and crackers. Add enough milk to moisten; let stand fifteen minutes. More milk may be needed to yield a moist mixture. Press half the meat in a greased loaf pan; through the center arrange the whole eggs end to end in a row; cover with the rest of the meat, pressing in place gently yet firmly. Bake in a moderately hot oven until firm and brown.
