Scald 1 quart of milk with 1 slice of onion and a bay leaf and strain. Melt 3 tablespoons of flour. add the flavored Milk gradually and season with pepper and salt to taste.

Butter a baking dish. fill with alternate layers of sauce and fish. sprinkle with fine bread crumbs. dot with bits of butter gnd bake until brown. Banana Souffle One cup milk, 12 cup powdered sugar, 1 egg, 1 tearpoon vanilla, 14 cup flour, 4 ripe bananas.

,2 cup heavy cream. Make soft custard by scalding the milk in the double boiler. Then add the powdered sugar, egg and flour, thoroughly mixed together: stir constantly and cook t11 thick. Add the vanilla and cool. Half fill sherbet glasses with this custard, then slice in part of a ripe banana and fill the cups with the custard.

Arrange a few more slices of bananas around the edge of the glass and put a spoonful of whipped cream in the center. Last of all, grate over the top a little chocolate. This dessert is delicious made in fluted paper baking cups. When the grated chocolate is on, it gives a perfect imitation of a cup cake. Eclipse.

Lemon Roll Beat 2 eggs yolks; add 1 cup sugar Slowly and 4 tablespoons cold water. Sift 1 cup flour with 112 teaspoons baking powder and 1,14 teaspoon salt. Add 2 egg yolks and sugar, alternating with 2 stiffly beaten egg whites. Spread very thinly on long greased pan. Bake in moderate oven about 15 minutes.

Turn out on a damp cloth sprinkled with powdered sugar. Trim hard edges and spread with filling and roll in a cloth while warm. Any kind of jelly may be used, but we prefer the following, which must be prepared before the cake, so it will be ready: Lemon FillingPut 3,4 cup sugar, 1 tablespoon cold water, 1 beaten egg. juice and rind of 1 lemon into a double boiler. Stir until it thickens.
