AMERICA NEEDS YOUR HELP NOV! Shad's Here And Seafood Lovers Smile What Many Consider Tasti est Fish in the Sea Now Available in Abundance "Probably today it is the best own and most highly prized fish on the Atlantic coast of the United States" is what is written of shad in a U. The joyous exclamation, is heard the length of the land each spring when this Sample voting machines will be: succulent seafood makes its an nual appearance. A fish of su perior flavor, the shad is caught only during its spawning season when it comes close to the coast and enters fresh water streams to spawn almost as does its illuS' trious colleague, the salmon. This popularity surely must be deserved since it has existeu since the days of the earliest settlers. In fact, it was due to popular demand that the shad was trans planted to the West Coast where it is now a common food fish in all the Pacific coast states. While the entire shad produc tion is far below the gigantic vol ume it reached long ago, still this delicious water food is so abundant during its short season that it becomes one of the bargains of the fish market.

But once that season is over, shad and its com panion in popularity, shad roe is in the delicacy class. That is why the multitude of shad lovers and smart shoppers can't get their fill of this great seafood during the shad season. In a properly outfitted basement you can store such family staples as potatoes, cabbage, celery, pumpkins, squash, apples and winter pears. You can dry corn, fruit, beans and peas. You can freeze broccoli, spinach, berries, peaches, aspara gus, meats and poultry. And you can brine green tomatoes and cu cumbers. These devices save both canning equipment and labor.

When you finally get around to the things that must be canned you start thinking about sugar. This year youU have to go easy on rich preserves (requiring a lot of sugar) and substitute fruits canned in light syrup, unsweetened pie fruits and fruit juices. Juicy fruits such as berries, cherries, currants and plums, may be canned in their own juices without sugar. So may apples, peaches and pears, when a little water is added. In any case remember that beet sugar is just as good as cane sugar.

Honey and maple syrup make ex cellent substitutes for both. Write the Superintendent of Documents, Washington, enclosing 10c in stamps, and ask for Farmers' Bul letin 1762 on canning.
