The main question we have to face is that of better markets and is the question to which 1 am committed. would secure better markets through the establishment of the municipal abattoirs. By this I mean local plants for each community where the cattle that are slaughtered and consumed in that community may be prepared with the cattlemen first buying up the cattle, second, paying the freight to Fort Worth, Kansas City or Chicago; paying a commission to have the cattle sold; and later to buy the meat after it has been slaughtered many hundreds of miles from home and brought back for local consumption. Abattoirs Would Help. abattoirs would prevent such a condition and eliminate the middleman's profits.

The abattoir at Paris, Texas, for instance, charges 75 cents for hogs killed and $1 for beef. The owners have the privilege of having the meat stored in refrigerating ments for three days withort cost; and after the third day a nominal charge is made. It may be that every community could not slaughter and care for meat on the same basis, but that is for each community to work out. Certainly it would be a much cheaper way than the long process through which we now' go. How They Would Help.
