With that recommendation, let's ' try the Burns' buns. We might also try crumble-top cod steaks, another favorite with the Burns family. Ftah-Siick Bum (Makes 5 servings) Prepare fish sticks according to directions on package. Split buns and toast. On each bun half place a lettuce leaf and two fish sticks. Put a heaping teaspoon of tartar saKce on the sticks. Cover with remaining bun halves. Serve while Jtsh i sticks are warm. Tartar Sauce: To one cup of mayonnaise, add a little lemon juic«, 2 tablespoons chopped pickle and 1 tablespoon sliced olives (K desired). Crambte-Top Cod Cakes (Makes 3 servings) Three cod steaks, fresh or frozen, '/it cup milk, y 2 teaspoon salt, 1 cup crushed cornflakes, 1 cup Trench dressing, 2 teaspoons horseradish. If steaks are frozen, let thaw on refrigerator shelf or at room temperature. Add salt to milk. Dtp st Aks first in milk, then in corn/Jokes. Place .on well-greased baking sheet. Add horseradish to French dressing. Drizzle some of the dressing on the steaks. Broil in preheated broiler for 10 to 12 minutes. Heat remaining dressing and serve as a sauce. We select these two that use monosodium glutamate, a powdered agent for bringing out the flavor of the Ingredients used In the recipe. It does not add flavor of its own, it bring! out flavors already in the recipe. Both the French and Chinese have been using It for centuries. Souffle Topped Cauliflower (Servei 4-6) Trim and wash large head of cauliflower; separate Into flowerets. Cook In boiling salted water Just until barely tender, drain, reserving liquid. Arrange flowerets in single layer in greased 8x8x2- inch baking dish. Make sauce with 3 tablespoons each butter or margarine and flour, >/ 2 cup reserved cauliflower liquid, and V t cup cream. Add V, cup grated Parmesan cheese, salt and pepper to taste, and teaspoon monosodium glutamate. Cool, then blend in 2 slightly beaten egg yolks; fold in 2 stiffly .beaten egg whites. Spread evenly over cauliflower; dust With paprika. Bake at 425 degrees F. about 20 minutes, until lightly browned. Corned Beef Hash Casserole (Serves 6-8) Mix 2 (1-pound) cans corned beef hash, 2 cups (firmly packed) grated soft bread crumbs, 2 slightly beaten eggs, '/ 2 cup milk and V* cup chopped onion. Season with salt and pepper to taste, and '/ 2 teaspoon monosodium glutamate. Pack into greased 8x8x3-inch Ham And Veal Loaf For Dinner This loaf slices beauMfuHy, tastes dellcioui. Ingredient: 2 eggs, 1 cup milk, 1 1[4 pounds uncooked smoked ham (ground), 3|4 pound veal shoulder (ground), 1 cup fine dry bread crumbs, 1J2 teaspoon salt, 1'8 teaspoon pepper, 1,2 cup syrup leftover from pineapple or other canned fruit. Method: Beat eggs in large mixing bowl enough to blend yolks and whites;, .add milk and beat enough to combine. Thoroughly mix in ham, veal, fine dry bread crumbe, salt and pepper. Shape into a loaf on shallow un- greased baking pan. Bake in moderate (350 degrees) oven for 1 1J2 hours; baste every 20 minutes with the fruit syrup. Remove to platter wiUi two wide spatulas or pancake turner*. If pineapple lines are served with the loaf, stud with clovw and heat in a skillet in a little butter or margarine and brown sugar; arrange hot rings around the lo»f. INGREDIENTS: 3 slices bacon, 1 8-ounce package frozen brussels sprouts, milk 2 tablespoons butter or margarine, 2 tablespoons flour, salt, pepper. METHOD: Cook bacon in skillet until crisp; drain on paper towel or brown paper; crumble coarsely. Meanwhile cook brussels sprouts according to package directions.
