Coffee Is Heritage in Turkey From Earlier Era By AHMET BALAN 'Istanbul The powdery black grounds in the bottom ol a cup of Turkish coliee hold a secret. The coffee really doesn't come from Turkey at all, but from Brazil. "Turkish Coffee" means, a certain type, of coffee, like Italian espresso or French coffee. But in this nation of coffee lovers it's more than a nair.e it's a way of life. Turkish coffee is a heritage from the golden days of Turkey's history, when the Ottoman Empire stretched from Algeria throughout the Middle East to the walls of Vienna.

Turkey, because of its climate couldn't and still can't grow coffee beans. The Ottomans therefore had to import, just as the modern Turks do. They sent camel and mule caravans to Yemen at the tip of the Arabian peninsula to bring back that country's famed beans. Royal "coffee caravans" took months to cross the desert and mountains before arriving at the sultan's mighty palace in the capital of Istanbul. Those days are but the coffee or the preparation oi remains the same.

In Turkey, coffee is traditionally served after lunch and dinner and to guests at any time. Westerners who have occasion to call on several Turkish friends or business contacts in the course of a day usually end up com nlPfplv coffee logged. Thp brew also is served in traditional coffee houses throughout Turkey. In some places the coffee houses are eNtremely primitive, with standards of cleanliness iar below western in the cities of Istanbul, Izmir or Ankara there are many modern shops, with glass topped tables and comfortable armchairs. But whether the coffee house is big or small, neat or dirty it serves this purpose: A place for the Turks usually men only to' meet, to play cards or backgammon and to drink innumber able cups of coffee.

iHow is the coffee made? is prepared in a "djezveh," a' long handled pot, over a charcoal fire (or gas in the big cities). The finely ground beans are placed in the bottom of the pot and water added, enough usuallly for only one or two cups at a time. The djezveh is placed over the flame or half buried in the charcoal ashes to bring out the flavor. When the mixture boils it forms a thick, foamy cream on top. All of it, including the grounds, are poured imo sinaji china demitasse cups.

The coffee' can be served black, semisweet or very sweet. The sugar usually is added in the pot before heating. Many cui fee lovers prefer to place a half. lump of between their front teeth and sip the coffee through it. The true aficionado also skillfully shakes the cup at the right moment and gulps down the thick grounds.

However, most drinkers foresake the grounds. It is not unusual to hear a Turk finish his coffee, smack his lips and tell the coffee maker: 'May Allah give you more. Your hand be praised." M.
