Roast Chicken With Herbi John Wagner |4 servings) One 2%-pound chicken, cleaned and dressed; 1 carrot, sliced, one- third teaspoon salt, 2 teaspoons thyme, 2 tablespoons butter, 3 slices fatty bacon, paprika, one- third can beef bouillon, 4 tablespoons water, Juice of 1 lemon. Stuff .chicken with 1 sliced car- or margarine. Put in pan and fast- rot, 1 teaspoon thyme, one-third teaspoon salt, 1 tablespoon butter en legs and wings securely. Cover with 3 slices bacon, '/ 2 tablespoon butter or margarine on each side. Dust with salt, paprika, teaspoon ol thyme. Place in oven pre-heated to 450 degrees P. Baste every 15 minutes for 1.14 hours with one- third can of beef bouillon diluted with 4 tablespoons water. Reduce heat to 350 degrees and cook for half hour longer. Draw off basting juice and mix with lemon juice. Portion chicken by cutting along breastbone with poultry shears and along both sides of backbone. Separate each side into breast and leg sections. Pour basting juice over each portion and serve. Puree Mongols Hearty Soup For Main Course This hearty soup makes a rib- sticking main course. Ingredient*: 91 cup quicK-cook- nlg green split peat, % cup cubeJ cooked leftover ham ends, % cup diced raw carrots, 1 cup sliced celery (including some of the leafy top), 1 cup thin strips onion, (ew sprigs parsley (minced, 5 cups water, 1 can (10 Vi ounces) t'onden- sed tomato soup, salt and pepper. Method: Wash peas In strainer in cold water; drain; turn into soup kettle with ham, carrots, celery, onion, parsley and water. Bring to a boil quickly; reduce heat and simmer, stirring occasionally, Jn- til peas are cooked—about 1 hour. Broiled Swiss Eggs Once you try this delectable way of cooking eggs you'll iuse this recipe often. Ingredients: For each serving — H teaspoon butter, 2 eggs, 2 tablespoons heavy cream, 2 tablespoons grated dry Swiss cheese. Method: Melt butter in 6-inch Iron skillet; break eggs into skillet. Pour cream over egg yolks; sprinkle with grated cheese. Place, over low heat just until edges of eggs turn white; broil at Press soup, ham and vegetables through strainer or food mill. Return pureed soup to kettle; stir in undiluted tomato soup; heat, adding salt and pepper to taste.
