Editor Oood, fresh vegetable dishes that arc different but not too fancy jtr* always welcome. This potato and onion pie is a great dish tor a hungry family. Potato and Onion Pie (Yield: 8 servings) One and one-quarter pounds small white onions, y x pound (4 medium) carrots, JJ Inch boiling water in saucepan, l'/ 4 teaspoons aalt, 1 teaspoon butter or margarine, 1 tablespoon flour, V 2 teaspoon salt, one-sixteenth teaspoon ground black pepper, 154 cups milk, )4 cup carrot and onion stock, & cup shredded sharp Cheddar cheese, 3 cups fluffy mashed potatoes. Peel onions, leave whole. Peel carrots, quarter and cut into 2- inch pieces. Put both, onions and carrots, In a saucepan with the '/2-inch boiling water and salt. Cover. Boil 10 minutes, or until almost tender. Drain vegetables (save water to use in the cream sauce), and put into a 9x9x2-inch baking pan. Melt butter or margarine in a saucepan. Blend in flour. Stir in milk and the carrot and onion stock. Cook until slightly thickened. Add cheese. Pour sauce over the vegetables. Top with fluffy mashed potatoes. Bake In a pre-' heated moderate oven (375 de- se P.) for 30 minutes or untilee.gr potatoes are brown. Here is another recipe from Av- anelie S. Day, an outstanding expert in fresh vegetable cookery. Kale in Sour Cream (Yield: 4 servings) One pound fresh kale, % teaspoon salt, one-sixteenth teaspoon ground black pepper, 1J4 teaspoons fresh lemon juice, 1 cup sour cream. Wash kale and trim off any defective parts. Cut into 2-inch pieces. Cook in a lightly overed saucepan, with only the water that clings to the leaves, 7 to 9 minutes or until tender. Add salt, black pepper and sour cream. Heat only until hot — DO NOT BOIL. Stir cornstarch, sugar and salt together thoroughly. Stir in oranpe Juice until smooth. Cook and stir constantly over modernte' heat until clear and thickened. Add butter. Stir sauce Into beets.
