Creamy Flavors for Summer by Beth Merrtnum PARADE FOOD EDITOR Homemade ice cream is always a special treat, because it can be made in flavor combinations that are not generally available. This recipe for Banana Medley Ice Cream, for example, begins with a creamy custard mixture (o which mashed ripe bananas, crunchy almonds, miniature marshmallows and grated chocolate add marvelous flavor and interesting texture. It is delicious served "as is," but you may wish to add a finishing touch with either caramel or chocolate sauce. Banana Medley Ice Cream 1 cup granulated sugar Vs teaspoon almond extract 2 tablespoons flour 3 or 4 drops yellow V teaspoon salt food color 4 cups light cream or half and half 4 eggs, beaten Vz cup chopped almonds 1 cup miniature marshmallows 4 large ripe bananas, peeled and 1 square (1 oz.) mashed (about semisweet 2 cups) chocolate, grated 1 tablespoon lemon juice FROM PARADE'S TEST KITCHEN Combine sugar, flour and salt in saucepan. Gradually stir in cream. Bring to a boil stirring constantly over low heat. Simmer 2 minutes. Add small amount of hot mixture to eggs; mix well; return egg mixture to pan. Simmer and stir over low heat 1 minute; remove from heat; add bananas, lemon juice, almond extract and food color; mix well. Pour into two freezer trays; freeze until firm around edges but soft in center. Turn into large chilled bowl. Beat until creamy. Stir in almonds, marshmallows and grated chocolate. Return to freezer trays; freeze until firm. Makes about 8 cups or 2 freezer trays. PHOTO BY WALTER STRELNICK TAKE A LOOK.
