28 COOKING COLUMN The Poor By NOR AH CHERRY ' Deep purple eggplants are now reaching1 the produce stalls from local market gardens. Eggplant la a minor vegetable commercially and many Canadians are not too familiar with its cooking possibilities. It is excellent served as a vegetable or as a tasty spread for crackers. Oven-fried eggplant la ' de- UciouSf If you wish you can , sautee the slices in the butter In a skillet, ft can be combined with mushrooms for a fine vegetable to accompany lamtrnr veal. EGGPLANT CAVIAR 1 eggplant . Place In shallow pan. Bake one to 1 hours oruintil toft. Peel and chop finely. Saute onion in oil until soft but not brown. Add chopped eggplant and tomato paste. Stirring constantly, cook until thickened, about 1$ minutes. Stir In lemon Juice and seasonings. Cool then chill. Serve in small dish surrounded by unpared ellced cucumbers. Yield: about 1V4 cups. Cook in one-inch boiling salted water for IS minutes. Drain. Preheat oven to ISO degrees. Melt butter. Beat egg. Combine butter, egg, cream and seasonings. Place drained vegetables In buttered shallow casserole. Pour on cream mixture. Combine cheese and crumbs. Sprinkle over vegetables. Yield: five servings STUFFED EGGPLANT 1 large eggplant I slices bacon M cup sliced green pepper 1 cup sliced celery 1 1 cups sell bread crumbs I cup undraimd crushed pineapple I tablespoon butter V, teaspoon paprika cup water Wash eggplant; remove leaves and stem. Place on trivet in deep saucepan. Add boiling water to come to top of trivet. Cover saucepan. With heat at medium cook unlit steam rises. Reduce heat to low. Steam for 30 minutes of until tender. Cut eggplant in half lengthwise. Remove pulp leaving -inch thick wall. Dice pulp. Partially cook bacon in skillet; add eggplant and brown. When bacon crips, remove and crumble. Add celery and green pepper to fat in skillet. Cook - -until tender but not brown. Preheat oven to 3S0 degrees. To eggplant and bacon mixture, add celery and pepper, crumbs and pineapple. Fill eggplant shells. Place in shallow baking pan. Dot with butter; sprinkle with paprika. Pour water In bottom ol pan. Bake 40 to 45 minutes.
