Editor Buy a few jars of preserved fruit and you've made a start with two delicious meat recipes. Mrs. Mermen Williams, wile of Michigan's governor, gave us a ham recipe, using Michigan's famed cherries in preserved 'form, Mother of three growing children, and active in a. heavy official social schedule, she sayi this recipe le good for a busy day dinner because it is quick to do yet hand' some to look at. Cherry-Basted Ham (Makes 4-6 servings) Two-thirds oup cherry preserves, % teaspoon prepared mustard, IVi to 2-inch slice ready-to-eat ham. Combine cherry preserve* and mustard, mixing gently but thoroughly. Blash fat edges of the slice of ham. Place ham on a broiler pan. Broil in a preheated broiler 3 to 4 inches from source of heat for 10 minutes. Turn and broil until brown, about 10 minutes. Pour off ham drippings and save for future use. Spread ham with the cherry sauce'and continue broiling about 2 to 3 minutes, or until cherries and sauce are piping hot. Serve immediately . ' Mrs. Joseph Parrington, delegate from Hawaii, gave us a typical Hawaiian recipe for roast pork, using canned'pineapple preserves. . "It's a modern version of a luau where guests eat pig roasted in Ti leaves." Hawaiian Roast Pork (Makes 6 servings) One and one-half teaspoons salt, freshly ground pepper, 2 teaspoons paprika, !4 teaspoori powdered dry mustard, 'A teaspoon ground ginger, one 3-to-4-pound pork loin roast, 2-3 cup pineapple preserves. In a small bowl blend salt, pepper, paprika, mustard and ginger together. Bub this mixture into the uncooked roast. Place the seasoned roast, fat side up, on a large piece of heavy-duty aluminum foil. Pour Foiled Baked Fish; No Pan There's no pan to wash, when you bake fish 'this Way. FOIL BAKED FISH Ingredients: 4 whole small fish (about Vz pound each), salt and 'pepper, 8 ripe olives, 4 small onions, 4 tablespoons butter or margarine, 4 teaspoons minced parsley, paprika. Method: Use any variety of small fresh fish desired. Have dealer scale fish and cut away fins and part of tail, but do not have head or bones removed. Wash fish In cold water; clean opening near head well. Place each fish in center of a piece of aluminum foil (about 12 inches square); be sure fish is placed parallel to two sides. Sprinkle fish with salt and pepper. Cut olives from pits hi large pieces and place inside opening near head of fish. Peel onions and slice into thin rounds; arrange onion over top of fish; sprinkle with salt and pepper and dot with butter. Sprinkle with parsley and paprika. Lift two opposite sides of foil so they meet; make tight double fold; fold open ends over a few times. Place on baking sheet in hot (425 degrees) oven 20 to 25 minutes. Peek into one fish package if you want to check doneness. Serve packages unopened. Makes 4 servings. Raisin-Rice Pudding Made In Your Oven Put this pudding in your oven with a meat loaf. Ingredients: 3 cups milk, 1 tablespoon butter or margarine, 2i3 cup packaged pre-cooked rice, 1'3 cup sugar. 12 teaspoon salt. 12 teaspoon vanilla, 1:4 cup raisins (washed in hot water and drained), nutmeg;. Method: Put milk and butter in saucepan nnd heat until very hot. Mix with rice, sugar, salt, vanilla and raisins. Turn into buttere l-quart baking dish. Bake in moderate (350 degrees) oven for 45 minutes: stir every 15 minutes, the third time after removing pu'dding from oven. Cool and serve at room temperature. Sprinkle with nutmeg at ser.ving time. Makes 5 servings. Note: The pudding may be thin when first removed from oven but it will become creamier on standing because the rice will continue to absorb the milk as the pudding cools. Method: Sift together the flour, baking powder, salt and sugar. Stir In cornmeal. Beat egg until thick and Ivory-colored; beat In 1 cup milk enough to combine. Add flour-cornmeal mixture to egg-milk with melted butter; beat until combined. (I'/j by 1& inch«>. Pour '/4 cup milk carefully over mixture. Bake i: hot (400 degrees) oven until firm — » mlnutea.
