Add egg. Beat minutes longer. Increase skillet heat to 260 deg. Remove cover from skillet. Spread batter evenly over peach mixture.

Cover. Cook 30 to 35 minutes or until cake. dry on top. Loosen cake around edges of pan with spatula: Invert on square, chop plate. Serve hot with whipped or ice cream, if desired.

Drain syrup from pineapple. Add cup drained syrup to gelatin mixture. Separate eggs. Beat yolks slightly and add to gelatin mixture. Cook over- low heat stirring until mixture coats a spoon.

Add- drained pineapple, sieved cottage cheese, lemon rind and juice. Beat egg whites to stiff' meringue. Whip cream. Fold meringue and cream into cheese mixture. Combine crumbs, 'remaining cup sugar and melted butter.

Line bottom of 81in. square pan with crumbs (save 1-3 cup crumbs for topping). Fill with pineapple mixture and sprinkle top with remaining crumbs. Chill until firm. Yield: nine servings.
