Highlights this week MONDAY A new cooking-exercise program debuts on CTV at 6:30 a.m. Pots and Pans demonstrates how diet and exercise, when combined, make losing weight a faster, pleasant experience. The Alan Hamel Show premieres on Channel 12 at 2:30 p.m. The week-day talk-show will offer top names in show business, literature, sports, science, journalism and politics. The Captain Tennille, a new variety series starring Daryl Dragon and Toni Tennille airs on ABC at 8 p.m.

Guests on tonight's program are Jackie Gleason, Ron Palillo and Lawrence Hilton Jacobs Another new variety series is Van Dyke Company on NBC at 10 m. Comedians Flip Wilson and Chevy Chase will be Dick Van Dyke's guests for the premiere show. TUESDAY A special two-hour telecast of Baa Baa Black Sheep airs on NBC at 8 p.m. Robert Conrad stars in this new series based on the factual accounts of Maj. Gregory "Pappy" Boyington, a maverick World War II ace.

Pappy quits the Flying Tigers, returns to the Marines, wrangles a major's rank through a phony call to an admiral and forms The Black Sheep, a crew comprised of fighter pilots awaiting court-martial. Rich Man, Poor Man Book II premieres on ABC at 9 p.m. This new series begins where the previous series concluded, in the year 1965, and spans the next decade in following the lives of Rudy Jordache, Billy Abbott and Wes Jordache. Peter Strauss will again star as Rudy Jordache. Julie, a new variety series starring Julie Amato debuts on CTV at 9 p.m.

Patrick Rose and R. G. Brown will appear as regulars. WEDNESDAY Tim Matheson and Kurt Russell star as Quentin and Morgan Beaudine in The Quest, a new western series on NBC at 10 p.m. After eight years of separation, the two Beaudine brothers set out to find their sister, believed to be a captive of the Cheyenne.

Kate Jackson, Farrah-Fawcett Majors and Jaclyn Smith star as bright, athletic and police trained beauties who work as private detectives in Charlie's Angels, a new series on ABC at 10 p.m. THURSDAY Gemini Man makes its debut on NBC at 8 p.m. Ben Murphy stars as special investigator Sam Casey, whose ability to become invisible is a valuable resource in his work on matters of national and internatic jl security. FRIDAY Holmes Yo Yo, a new half-hour comedy series debuts on CTV at 7 p.m. Richard B.

Shull and John Schuck star Thirty minutes later on CTV, The David Steinberg Show premieres. The series, a combination of comedy and variety, was.taped before a live audience and stars Canadian-born David Steinberg. Serpico makes its debut on CTV and NBC at 10 p.m. David Birney stars as Frank Serpico. Diana Ross will serve as co-host (with Alice Cooper) during the' second annual Rock Music Awards presentation, on CBS Saturday at 10 p.m.

The program will be broadcast live from the Hollywood Palladium. Rock and pop critic Juan Rodriguez has the details, page 8. SATURDAY The winners in three categories of the 1976 Canadian Stage Band Festival are featured in a final concert with Rob McCon-nell and The Boss Brass, and best individual musicians form an all-star band playing in the same concert, on CTV at 7 p.m. Alan Hamel is the host. SUNDAY The first of a four-part series on the history of aviation in Canada debuts on CBC at 10 p.m.

The Passionate Affair was produced by Cameron Graham and is hosted by Patrick Watson. CTV's Window on the World series presents a repeat broadcast of Britain Who Shot the at 10 p.m.The program take a look at some of the ills that plague Britain today. Harvey Kirck narrates.
