Welsh Rabbit (Yield: 6 servings) One tablespoon butter, 1 pound Cheddar cheese, grated (4 cups), % cup ale or beer or milk, 1 teaspoon Worcestershire sauce, % teaspoon dry mustard, % teaspoon hot pepper sauce, salt to taste. Melt butter and cheese in double boiler or chafing dish over hot, not boiling, water. As cheese begins to melt, gradually stir in ale or beer, or milk. Cook only until smooth and hot. Stir in seasonings. Jf desired, sprinkle with paprika. Serve with hot toast points. Buffet Salad Bowl (Yield: 6 servings) One grapefruit, 1 avocado, 6 stalks endive, 1 half head escarole or other salad greens, French dressing. To section grapefruit, cut off peel in strips from top to bottom, cutting deep enough to remove •white membrane. Cut along side of each, dividing membrane from outside to middle of core. Remove section by section over bowl to retain juice. Peel and cut avocado wedges, endive and escarole to form colorful pattern. Serve with IVeneh dressing. ' XEW YEAR'S EVE BUFFET SUPPER: Salted nuts, olives, potato chips, pretzels, Welsh rabbit on hot toast, salad of avocado, grapefruit sections, endive, escarole, French dressing, chilled bottled drinks, chocolate, coffee, tea, milk. Here's an idea for a main lunch or dinner dish good for meatless days or any day, for that matter. Mushroom Omelet (Makea 4 servings) Three tablespoons butter, 2 tablespoons finely diced onion, 2 tablespoons finely diced green pepper, 4 eggs, 3-ounce can chopped broiled -mushrooms, Vt cup commercial sour cream, 1 tablespoon catsup, % teaspoon salt, % teaspoon pepper. Melt butter in 9-inch skillet over moderate heat. Add onion and green pepper and saute until barely tender, about 5 minutes, stirring frequently. Meanwhile slightly beat eggs in bowl. Add contents ot can of mushrooms, sour cream, catsup, salt and pepper. Add cooked onion and green pepper. Melt 2 tablespoons butter or salad oil in skillet over moderate heat. Pour egg mixture into skillet and cook until omelet surface is consistency of custard, occasionally, lifting sides •with spatula to allow liquid to run underneath.
