COOL CUCUMBER sauce can be made In the mornlni and kept In the refrigerator ready for the party or evening- meal. By GAYNOK MADDOX NEA Food and Markets Editor "Cool as a cumcumber" is just what this smooth and subtle sauce is. It's perfect with salads of fresh servings. TOMORROWS DINNER: Grilled broiler halves or beef patties, corn with chili butter, jellied vegetable salad with cumcumber sauce, en- garden vegetables molded in unflavored gelatin. Cucumber Sauce One-third cup mayonnaise or commercial sour cream; 2-3 cup finely diced cumcumber; % teaspoon salt; % teaspoon tabasco. Mix together all ingredients. Serve with vegetable loaf. Yields 1 cup. These molded vegetable salads can be made in the morning and kept in the refrigerator ready for the party or evening meal. To un- mo'd, just dip the loaf pan into •warm water for a few seconds and then .turn onto serving plate. Serve sauce separately. Jellied Vegetable Loaf Two envelopes tmllavored gelatin, 3 cups wnfer, divided; Vi cup sugar, '4 teaspoon salt, % cup lemon juice, \k cup sliced radishes, % cup grated carrot, 2 cups finely shredded cabbage, 'A cup diced green pepper. Sprinkle gelatin on 1 cup of the cold water in saucepan to soflen. Place over medium heat. heat. stirring constantly, until gelatin is solved. Remove from heat, add sugar and salt; stir until sugar is dissolved. Stir in remaining 2 cups water and lemon juice. Chill until mixture is the consistency of unbeaten egg white. Fold in re-. maining ingredients. Turn into 9x5x3-inch loaf pan; chill until firm. Unmold; serve with cumcum- ber sauce. Yields 8 servings. Molded Tomato Relish One envelope unflavored gelatin, 1V4 cups tomato juice 1 , divided; M> cup chili sauce, 2 tablespoons lemon or lime juice, V 2 teaspoon Worcestershire sauce, % teaspoon salt, Vt teaspoon tabasco. Sprinkle gelatin on Vi cup of the tomato juice in saucepan to soften. Place over low heat, stirring constantly, until gelatin is dissolved. Remove from heat; add remaining Vt cup tomato juice, chili sauce, lemon juice, Worcestershire sauce and labaseo. Pour into a 2-eup mold or individual molds; chill until firm. Unmold and serve as relish-salad with meat. Yields 4 riched bread, butter or margarine, LIZ TOM-MEY, newswoman, lives on a vast South Jersey farm with her husband, John Seabrook, When she prepares dinner, it's usually, a scoop. ', . Her green vichyssoise is a headliner. For 6 servings combine a package of chopped, frozen spinach and a can of frozen cream of potato soup. Add a cup of heavy cream, a cup of ' water and 2 chicken bouillon cubes. Simmer gently in covered pan until soup and spinach are completely defrosted. Then blend mixture with an electric blender Cor an electric mixer or sturdy rotary beater) until very smooth. Chill soup several hours and serve icy cold, garnished with thin slices of radishes. Another of her quick specialties is asparagus with pecans. Cool the asparagus (fresh or frozen) until just tender. Drain and mari nate in a French dressing made with lemon juice and add a sprinkling of chopped pecans to each serving. Her favorite dessert is strawberries in wine: Drain part of the syrup from frozen whole strawberries. Add a cup red wine to each package of ;he frozen fruit.. Stand several lours at room temperature before serving. Accompany. with crisp, :hin-, sugar cookies.
