For your own luau on porch or in the yard, Lewis suggests a low table around which are placed cushions or fiber mats. (Polynesians sit cross-leggeci.) Cover table with crepe paper in tapa or tropical design. Spread green leaves DON'T LET THE from the garden along the table and, of course, fresh flowers. For a truly Hawaiian atmosphere, have fresh pineapples (topped, scored and retopped) and fresh coconuts. To get on-the-spot recipes for a Fourth of July Luau, we relaxed in the softly lighted Hawaiian Room, sipping Polynesian Foam from a coconut shell. First came a large tray of pu-puus (Hawaiian appetizers) with a small iron ba- zier ablaze in the center. On it were barbecued spai;eribs, Hawaiian style, with fresh pineapple chunks and kumquats, nuggets of marinated beef and chicken on spears, Island shrimp, clam shells stufefd with chopped clams, sesame seeds and the restaurant's famous Rumaki. Rumaki (serves 4) Eighteen water chestnuts, 6 chicken livers, 18 bacon strips, 9 scallions, V4 cup soy sauce, "A teaspoons ground ginger, 'A teaspoon curry powder. Cut chicken livers into 3 pieces each. Fold each piece over a water. chestnut. Wrap a strip of bacon and a scallion, sliced lengthwise, around the liver - chestnut core, pinning each kabob with a toothpick. Marinate for at least 1 hour in soya sauce, ginger and curry powder. Serve on thin bamboo sticks. Broil over brazier for 5 minutes, or until bacon is cooked thoroughly. TOMORROW'S DINNER: Ru- maki, broiled fish fillets, tartar sauce, parsley new potatoes, broiled tomato halves, crusty bread, butter or margarine, tossed green salad, oil and vinegar, fresh strawberry cake, coffee, tea milk. "Fourth" at home you'll need good food ready when guests drop in. Here are particularly festive recipes. • Fourth Of July Strawberry Cake Use sponge cake (bought or baked) split in layers. Put together in shortcake fashion with sliced fresh strawberries and whipped cream. Frost top and sides wifh whipped cream. On top simulate 'the flag with rows of sliced strawberries between rows of whipped cream. Place oblong of fresh blueberries in upper left-hand corner. Molded Avocado and Tuna Loaf (8 servings) Avocado Layer: One envelope unflavored gelatin, % cup cold water, 1 teaspoon sugar, 2 tablespoons lemon juice, 1 tablespoon (3 teaspoons) golden brown prepared mustard, 1 cup mashed avocado, l /2 cup sour cream, V4 cup mayonnaise, 1 teaspoon salt. Tuna Layer: One envelope unflavored gelatin, '/. cup cold water, Vt cup boiling water, 3 tablespoons lemon juice, 1 teaspoon salt, one 7-ounce can tuna, flaked; Vt cup diced pimiento, 1 cup diced celery, 1 tablespoon (3 teaspoons) prepared mustard. Avocado Layer: Sprinkle gelatin on cold water to soften. Place over medium heat and stir until thoroughly dissolved. Add .sugar and lemon juice. Chill to unbeaten egg white consistency. Add remaining ingredients and turn into a 9%-inch loaf pan and chill. , Tuna Layer: Sprinkle gelatin on ',4 cup cold water to soften. Place over medium-heat and stir until thoroughly dissolved. Add remaining % cup water, lemon juice and salt and chill to unbeaten egg white consistency. Add remaining ingredients. Turn on top of almost firm first layer and chill until Graham to Close New York Crusade Definitely July 21 NEW .YORK (UP) —Erangelist Billy Graham announced Wednesday night that his spectacular crusade to save New York "will definitely end July 21."
