J.OGANSPORT PUBLIC LIBRARY Twenty Logansport, Indiana, Pharos-Tribune American Family Menu DELICIOUS SUMMER meal that Is easily prepared Is this combination of creamed mushroom, tuna and hot, fluffy rice rine. BY GAYNOK MADDOX, onion, chopped; 1 small stalk cel- chopped; NEA Food and Markets Editor ' For an easy, really delicious summer meal, try this mushroom, tuna and fluffy rice combination. Creamed Mushroom and Tuna Fish (Serves C) Three • quarters pound fresh mushrooms, or two cans (4 ounces each) mushrooms; 6 tablespoons butter or margarine. Vt cup lemon juice, 1 tablespoon minced onion, 4 tablespoons minced pars/ey, 2 cans, 10% ounces each, condensed mushroom soup, 'A cup milk, 1 tablespoon paprika, 1 teaspoon salt, Vt teaspoon pepper, few grains nutmeg, 1 can (7v4 ounces) tuna fish, drained and flaked; 3 cups cooked hot rice. Rinse the mushrooms lightly in cold water. Remove stems and slice. In a heavy skillet melt the butter or margarine; add the mushroom caps, sliced stems, lemon juice and onion. Cook for 10 minutes, shaking the pan occasionally. Remove the mushroom caps to a bowl. Reserve. Add the parsley, mushroom soup, milk, paprika, salt, pepper and nutmeg; cook 5 minutes. Add the mushroom caps and tuna fish; reheat. Serve over hot fluffy rice ring. Serve immediately. Shrimp Creole With Mushrooms (Serves 6) Three tablespoons olive oil, 1 clove garlic, chopped; 1 medium ery, chopped; 1 green pepper, chopped; one 1% pounds cooked (or canned) shrimp, 1 pound fresh mushrooms, sliced, or two 4 ounce cans mushrooms; 1 No. 2 can tomatoes, 1 teaspoon salt, % teaspoon pepper. In large skillet or Dutch oven, heat oil and saute garlic. Add onion and cook 4-5 minutes. Add celery, green pepper, mushrooms and tomatoes. Cook 5-10 minutes. Add shrimp and seasonings. Cook over low heat 20 minutes. Serve with rice. TOMORROW'S DINNER: Creamed mushrooms and tuna fish on flaky rice ring, crips rolls, butter or margarine, spring sala'd bowl, fresh strawberries, light cream, coffee, tea, milk. The most recent government survey of our household food consumption reveals that practically all family meals today are overloaded with fat. The share of calories derived from fat is 44 per cent. Scientists studying the relationship between fat to cardiovascular disease and overweight say this is a dangerously high proportion. They advise it be cut to 25-30 per cent. An Agricultural Research report shows that meat, poultry and ish provide 27 per cent of the fat in our menus today. Milk and milk products (other than butter), eggs, baked goods and nuts provide 33 per cent. The remaining 40 per cent is furnished by visible fats and oils, such as salad oil, salad dressings, margarine, butter, bacon and salt pork. For your summer salads, a low- calorie mayonnaise is a blessing if your menus have too much fat. This recipe is. one of many from an excellent book, "Low-Fat Cookery," written by Stead and Warren, and approved by medical men. Special Mayonnaise (1 pint) One • half teaspoon unflavored gelatin, 114 cups evaporated skim' milk, undiluted; 2 egg yolks, 2 tablespoons sugar, 1%' teaspoons dry mustard, 1 teaspoon salt, J A cup mild vinegar. Soak gelatin in % cup cold milk. Scald iVt cups milk in double boiler. Remove from heat and dissolve gelatin in it. Beat together egg yolks, sugar, dry mustard and salt. Stir into this mixture a little of the hot milk and gelatin- mixture. Blend and add remainder of milk mixture. Return all to the double boiler and cook, stirring, over very low heat, until it begins to thicken (about 10 minutes). Remove from heat; add vinegar slowly. Allow to cool, then refrigerate. This will be' a comparatively thin mayonnaise. It thickens as it cools. If any lumps remain* strain.
