Twenty Logansport, Indiana, Pharos-Tribune American Family Menu CHEESE CAKE made by a French cook is graced with California strawberries, produced there from sprint: to fall. BY GAYNOR MADDOX, NEA Food and Markets Editor From spring to fall, it's always strawberry time in California. That fertile state produces about 44 per cent of the total U. S. crop. A French cook we know sings about her mother's cheesecake made of fresh strawberries, cream cheese and whipped cream. Here's her recipe, Americanized. Strawberry Cheesecake Parisian (One 9-inch cake) One quart fresh strawberries, cut in half; 1 cup sugar, ?. tablespoons unflavored gelatin, % cup could water, % teaspoon salt, 2 eggs, separated; two 8-ounce packages cream cheese, softened; 2 tablespoons lemon juice, 1 cup heavy cream, whipped; 3 tablespoons currant jelly. Reserve Vz cup strawberries for topping. Combine remaining strawberries and sugar; mix well and let stand W hour. Soften gelatin in 14 cup water. Drain juice from strawberries and add enough water to make 1 cup liquid. Add salt and egg yolks; beat well. Cook over low heat, stirring constantly, until thickened. Add gelatin mixture; stir until gelatin is dissolved. Add strawberry mixture; mix well. Chill until slightly thickened. Combine cheese and lemon juice; beat until fluffy. Beat egg whites until stiff but not dry. Gradually add strawberry mixture to cheese mixture and beat until smooth. Fold in egg whites and cream. Turn into 9-inch spring form pan. Chill until firm. Meanwhile, melt jelly; add reserved strawberries and mix welli Arrange on cake; chill. TOMORROW'S DINNER: Oven- tried chicken, frozen potato puffs, new peas, soft rolls, butter or margarine, lettuce and cucumber salad, Parisian strawberry cheesecake, coffee, tea, milk. Here are a few suggestions: Curried Chicken Soup: Can of cream of chicken soup combined with a can of milk, curry powder and salt. Chill and serve garnished with watercress or parsley. | Chilled Borscht: Can cream of I tomato soup mixed with the juice from'a can of beets, basil, salt, black pepper and onion powder. Top with a dollop of sour cream seasoned with celery salt. Tomato Frappe: Tomato juice mixed with lemon juice, chili powder, onion and celery salt and frozen to a mush.S erve cold with a dollop of sour cream. Garnish with watercress. Cold Tomato Bouillon: One can each, condensed tomato soup and beef bouillon, seasoned with thyme, marjoram and basil. Serve cold. Other warm - weather suggestions: Barbecued Pork Chops: Rub p6rk chops with garlic flavored salad oil. Barbecue. Marinated Barbecued Steaks: Marinate steaks in a sauce made of oil, lemon juice, with vinegar, onion and garlic powder, salt, pepper and basil for 2 hours. Baste with sauce while meat is cooking. Calico Cabbage Salad: Finely shred red and green cabbage. Mix with minced onion and celery, mayonnaise, salt, black pepper, celery seed, sugar and lemon juice tossed together.
