Richard Gonglach, general manager, said the restaurant, which is decorated with a Texas flavor, aims for the family market. By Linda C. Zimmerman SttWWriter Years ago, airline pilots started bringing home boxes of spicy chick-, en wings from New York.

The wings drew rave reviews from Sontherners long accustomed to fried chicken. Later, local restaurateurs provided their versions of this popular Northern food, and chicken wings progressed from finger food to main-item status. That's how Richard Gonglach explains the popularity of Buffalo's Cafe, which specializes in producing "original-style" chicken wings made famous in the Northern states. Buffalo's Cafe opened its first site in Roswell in October 1985. Its success prompted owners Ralph PerreHa and David Hyde to open a second site in January 1987, this 'time in east Cobb, explained Gonglach, who is general manager of both restaurants.

The secret of the chicken wings' success lies in the cooking and the special ingredients in the sauce, he explained. "We use fresh chicken that has never been frozen. Our cooking Sirocess involves four separate fry-ng times," he said, noting the chicken never sits in a fryer very long. "We get an order, tie wings are put in the final stage, then into the sauce and served sizzling hot in a basket," he said. While he labels east Cobb a "very finicky" area, Gonglach said the wings are catching on.

The son of an Austrian sausage maker, Gonglach has spent most of his working life in the restaurant business, he said. The Texan decor adds to the restaurant's appeal. The authentic barn-board walls, antique harnesses and framed Indian pictures enhance that Western look. On a recent visit, service was prompt and friendly. While the menu isn't extensive, customers are not limited to wings.
