S-F THE ATLANTA C0NST1 TLTIOX, Aug. 14. 1973 Breakfast Best Way to Start Day '1 I 1 A good breakfast is always the best way to start the day, and enjoying the early arrival of fresh apples from North Carolina is the best way to start the apple season. The gentle warm days and crisp cool nights that typify North Carolina's midsummer climate, encourage the apples in the mountain orchards to ripen more quickly than in other regions. It seem that the spicy independence of the Blue Ridge Mountain dwellers is echoed by the climate's eagerness to get on to fall.

The early arrival of Red and Golden Delicious apples in the market is an opportunity for everyone to experience again the lively tasting, crackling freshness of apples. Not only is the crisp texture and natural sweetness of apples satisfying when eaten out-of-hand, they add color and flavor to many cooked dishes. The United Fresh Fruit and Vegetable Association recommends, when selecting fresh apples for raw eating or cooking, look for firm, unbruised apples that have good color for the variety. The clear color of Red and Golden Delicious apples and the five characteristic bumps on the blossom end make them easy to identify. Apples will keep well in the refrigerator for two weeks or more.

Hardworking rural people, such as North Carolina's English and Moravian settlers, have never forgotten the importance of a good, nutritious breakfast Carolina Apple Pancakes served with sausage and fried apple rings are a sure-fire way to fill up hungry folks. CAROLINA APPLE PANCAKES 2 cups sifted all-purpose flour 4 teaspoons baking powder 1 tablespoon sugar 1 teaspoon salt Vi teaspoon cinnamon 2 eggs, beaten 1-H cups milk lk cup butter or margarine, melted 1 Red Delicious apple, pared, cored and chopped In a large bowl sift together flour, baking powder, sugar, salt and cinnamon. Mix eggs, milk and butter, add to flour mixture and stir just until flour is moistened. Stir in chopped apple. Drop batter by cupfuls onto a hot, lightly greased griddle.

Cook turning once, until goldea brown. Makes 4 servings. APPLE SAUSAGE BREAKFAST FRY 1 pound bulk sausage, cut into tt-inch slices 2 Red Delicious apples, cored and cut into inch rings Place sausage slices and apple rings on the bottom of a large skillet (It may be necessary to use 2 skillets or make 2 batches.) Cook over medium heat turning occasionally, for about 20 minutes, until sausage is well browned and apples are tender. Serve with eggs, pancakes or French toast. Makes 8 servings.
